Personally I find a thermometer helpful but not necessary. But I don't want to bring that old debate back up. If you are doing a stripping run crank that bad boy up as high as your condenser lets you, it won't take as long and you'll get some flavors to carry over. Shouldn't take nearly as long. My...

I also have a pot still. I took the thermometer, and threw it away. I crank up the flame, and keep an eye on the temp, by listening if the mash simmers. And when the exhaust pipe starts to get warm, i turn the flame alle the way down, and just let it run. But it takes a LONG time. Almost an entire d...
