My thought process on the permiable lids is allowing the angleshare to escape. Id like to use the oak in the bottle but have a lid that would allow for some evaporation. It wouldnt need to be oak......

smell and taste question ujssm
Racked 20 gallons of 5th gen ujssm wash this morn it had a very different smell and taste this round. Tasted alot less like beer and more like dry wine or vinager. I am 1 gallon into a strip run and the taste is much more heated to my tongue than the previous runs and has a slight smell/taste of rub...

Taste is mellowing out slightly at 1.5 gallons. Correction on original post the abv was 60% ,distillate was not as cool as I thought.

if I was to put a bottle away for several years would I use a smaller piece of oak per quart than the discussed 1x1x3? I think I am going to label 1 jar per run so I know what mash I used and how it was distilled and put it up for longer aging. I don't want to over oak I am after the mellowing that ...

Im about to start gen 4 of ujssm and am thinking about the start up process of a fresh batch when this one is spent. Is it adviseable to start the new batch completely from scratch or can you start the new batch with new yeast, grain and sugar and add in the backset from the preceding run?

related to this thread... i am saving up stripping runs of ujssm and ran out of gallon glass jars. i have several polypropylene food grade buckets. i know polypropylene is safe for the low alcohol content of the mash but is it safe to store 110 proof liquor? if not what is common practice to collect...

shady lane you are right on the money im sitn right at 40%. put some sugar in the backset and added back to the mash in the fermenter. going to run a few batches and then do a final spirit run. thanks for the answer.
