gas from my stove with a 5gal stainless steel pot. possibly too much or not enough heat/flame? I get the feeling it may have been cooling too quickly once it hit the bucket but the water on the top was warm and the bottom was very cold, maybe I should just fill 1/2 the bucket until it all get warm ...

I have a number of old fruit trees I use the printings from for my smoker, mainly apple but a taste of pear.
Living in the PNW, it is usually salmon, elk, and deer meat being smoked. Never rolled a fatty like that. Going to be firing up the smoker sometime in he net few weeks, I'll give it a try.

I went solder less and just used flour to begin wih too, but after takin it apart a couple times it must have loosend the joints and flour paste no longer did the trick

I believe a slow heat is best for initial warmup as it helps distishing the cuts, or at least the first one. Helps not bleed them together. A novices thoughts anyways.

I left a corn wash sitting for about a month after it was done fermenting and the final product had a really overwhelming corn flavor, way too much so.
