If it's not gone bad then I'd use it to age rum.
Personally if I was making an all grain whiskey I'd want nothing but a good oak barrel so that only the flavors of the whiskey and the oak were there.
A rum might profit greatly from all that fruity goodness left in the barrel.

Welcome!
We all did something stupid and those who are still here somehow survived.
Ideally things were learned along the way.
Can't say hi without mentioning the good stuff in Cranky's thread, read and learn and 'shine on'.

Um - didn't pay a lot of attention as I'm a little tipsy at the moment...
Didn't anyone mention just hanging a freaking oyster shell in the wash?
KISS right?

Re: Oak and whiskey
I don't have the trust in small aging. I want to source a quality barrel and fill it, so I can know. That's my aim I humbly suggest that you research. There are many actual commercial distilleries already using smaller barrels. Such as the place I bought my once used Bourbon barrels, 15 gallon size...

Re: Oak and whiskey
All of this is why I want to make 53 gallons and just purchase a new charred oak barrel... Then I look at the hours involved It's hard to imagine being able to make enough product to justify such a large barrel. Consider that filling a 5g barrel is roughly 220lb of grains and 110 gallons of ferment...

Sister and her whole family had it after getting exposed at a family funeral where they were "masked the whole time" except for that meal they had after the funeral at the church. Hmm. Thankfully they all recovered pretty well. Oldest folks were hit the hardest like everyone says. Then a month late...

shell.jpgI used 2 fairly large shells. That are about two-thirds the size of my hand. I drill a hole in them and hang them from a copper wire into the wash. I just wash off the crud that builds up on them and use them in the next wash. Works perfect . One time I guess the acidity got pretty high It ...

2" pipe into a 30" liebig with 3/4" over 1/2" copper.
Easily strips 2 gallons an hour, to get more I would need too run my cold water much faster than is comfortable for me.
So I am the limiting factor.

Re: Anybody get any good deals lately?
I picked up two blue 55 gallon barrels for fermentation @ $20 each.
I have a 30 foot motor home in the back that is becoming my new stilling shed.
These barrels are going to be an important part of my new design.
Think Breaking Bad but for booze...

What guns do you wish you had? I'd love to find a 22 WMR lever action rifle, that would be so much fun! All of the guns. I wish I had all of them. I wish even more I had the ammo to shoot them. I hear that! I just 'bit the bullet' as they say and put in an order for another 480 rounds of 7.62x54R. ...

Re: extreme novice rum distiller - first ferment/run?
I am very new as well. I have made exactly two batches of rum. I followed Buccaneer Bob's recipe from the "tried and true" section. My first wash had no dunder, and the second only had backset from the first wash without it being infected. Honestly, I am very impressed with the results. So, I canno...

Re: Previously filled barrel now evaporated safe to use?
Check for leaks by filling with water, personally I'd use warm water.
After sitting dry there may be shrinkage leading to tiny gaps that could seep (or pour) out.
Keep it filled with water until it stops leaking, then you can empty and fill with spirits.

My Panela rum after sitting in a once used Bourbon barrel with chunks of red wine staves in it after 3 years is really something.
I keep more than most recommend and let the barrel do it's magic.
Very happy here.

Re: extreme novice rum distiller - first ferment/run?
Be careful you don't add too much, it should be acidic.
I add oyster shells to my rum wash, the acid will consume some of the shell and keep the ph in range.
Too much dunder makes it difficult for the yeast to work.
Think 10% - 15% max, at least that works for me.
