Stripping runs ought to have gotten you clear of the “nasties”. I was going to suggest the mild reflux route but I like the pot still head route just the same. That's how I normally do it. Crushed shells (sold here as 'shell grit' for poultry) are easy to clean up if you put them in a little bag. I agree about very little being needed but adding rum backset or dunder to the ferment will add acidity so that's when I use the oyster shells.
Also, don't waste time and energy with crushed shells (IMO) they just are a mess to clean up.
Hang a shell or two inside, easy to clean up.

If you ever do try the Panela rum here's another tip.
Water, Panela, bread yeast and oyster shell.
Nothing else is needed, and the shell only of your wash needs it.

I had a specific need, had to have a 150 gallon BIAB to fit my stainless strainer.
The BIAB guys have that size because they make it for my big assed strainer.

I am still curious about the extent of the 'foaming coefficient' given your gluco treatment of the LME and the most exemplary FG of .999. If everything goes according to plan. Adding wash to your low wines after stripping for your spirit run is a flavor bomb. Referred generally as a 1.5 run, it can produce a richer rum than just doing the spirit run on the stripped run by itself. Then you figure out your keep and age it appropriately. The way I see it you're paying for someone else's time and energy.
Probably works out to be a pretty good deal, especially if you partial mash something in there for flavor.
I've done it a few times, made damn fine whisky too.

I've got two of the 7.5 gal tanks and about 5 of the 4+ gal tanks here. Since I use them all winter for extra heating (electricity is very expensive in my neighborhood) the local fillers don't bat an eye when I buy 35 gallons of the stuff. That's enough for me to run pretty well right through summer...

Yes, there's a reason why so many food recipes call for just a little bit of lemon or lime zest. The peel has intense flavor and oils and those come through the pipe when distilling. You have learned much with this experience, don't waste the knowledge you have gained! Also kudos for waiting and see...

Ex Bourbon barrels for my rum as well, so far it's the best way I have found.
After about 3 years it's amazing.
I am trying to get set up to start operating out of my old 30 foot RV, like good ole Walter White only with rum.
So far so good, if slow, slowly getting set up that is.

I got a bunch of it for free once, light LME.
Used it to make a scotch, added peated barley so it was a partial mash, aged in a barrel.
Turned out super awesome, but like others say it does foam up during distillation so be prepared.
