I received a story about this in one of my online professional journals this morning. Water chemistry problem developed when they switched to a more corrosive water source. I've made mango before. It was well received and taste carried over great, even when pushed to high proof. Word of caution...the oils in the skin can be an allergen to some. Thanks Bush...I've contacted the email addy that was provided on the ADI website after I saw the document recommended in several locations...just hate purchasing something site unseen without hearing a personal review. $150 is very cheap for a synopsis of the pertinent code.

Couple of inches of spacing between each element should be fine, three inches if you feel uncomfortable. The key is to be able to remove them for replacement. There is a lot of flavor in the skins and I like to leave them in the ferment, but be careful and leave yourself plenty of headroom in your ferment...the hulls trap the off gassing and tend to push up in a large cap that must be pushed back down. Welcome aboard. Probably closer to 7 lbs. sugar than 8, but close enough for what you are doing. Just let it continue to run its course since its a learning experience at this point. I see you are using bread yeast, but two weeks?....what temp have you maintained the ferment at?

Unless you contaminate one buffer with the other, the buffers should be viable for a short period of time after mixing. I purchase my baseline solutions so that I know they are right. I pour a small amount in a film canister and use that for about a week before throwing it out and using a fresh batc...

If anyone invests in a pH/TDS meter, keep in mind they need to be calibrated before each use. Usually best to do a two point calibration with 4.0 and 7.0 pH solution.
