Re: Random Pics

For those of you making mezcal / tequila... AgaveBat.jpg These bats are apparently threatened by the excessive demand for agave, which leads to plants being cut down before they mature enough to flower. Which means the bat gets no food. There are apparently responsible growers who leave a percentag...

ha . welcome in, i'm betting at least 4 of your NC neighbours are on the forum, it will just take a minute to find them, like AC says, it's not a chat room, you gotta wait for people to circle back around to the conversation. i was reading here for 3 months before i discovered there was an index boa...

Re: Best Top Shelf Vodka Recipe ?

wheat is a good choice. it's pretty bland and its cheap. if you don't have a tall reflux, your gonna have to wash it down by redistilling with fresh water until it's clean. maybe 2 or 3 spirit runs. then carbon filter it with activated charcoal then dilute with good RO water. That seems like a lot ...

Re: Stuck fermentation

It wouldn't hurt to adjust the ph and see if it fires back up with some yeast. Like HDNB said, next time test your ph and adjust your starting ph to around 5.5 with Citric Acid is always a good start. Your ph may not ever crash if you do that. if you are using HTL, you need to be 6-6.2 when you int...

Re: Stuck fermentation

summary: you're done. want to try and avoid this next time? pay attention to PH during mash, i use 6.2 for dough in, which is where my water comes in at anyway. i use some citric acid at mash in temps (before enzymes) to get PH 5.5 i have had much, much more success avoiding bacterial ph stalls by u...

Re: Stuck fermentation

i think you're done. either a bad mash with unfermentable sugars (hence the sweet taste) or a bacterial/ph stall for the record, i have never successfully saved a ph stall. just ran and got what i got. temperature stalls i have come back from, with some heat. if you think your msh was perfectly exe...

temperature? at the start, and after 24 h and now? ph will be down for sure. maybe a ph crash, i never had any luck fixing that. possibly got cold and slowed right down....fix that by warming up. next time figure a way to manage your temps more accurately. start in at about 90* and try and hold it u...

Re: Looking for a good and easy Whiskey recipe

I think using LME is the easiest and most fail-safe whiskey recipe. The ingredient's are warm water, Liquid malt extract and yeast. Pour the extract into the fermenter, use the warm water to shake and rinse out the jug. Dilute the LME to OG 1.060 - 1.050 and 80'f Sprinkel the yeast on top and cover...

Re: Looking for a good and easy Whiskey recipe

i'd vote for single malt too. My go-to is malt rye or malt barley 250g finely crushed malt to 1000mL water stir constantly (i have a mixer) heat to 155*f hold for 90 minutes at 149* cool to 90* add yeast wait about 5 days , distill. optionallty will add enzymes to make sure i get every drop, but not...

there is a rum distillery in Lunenburg Nova Scotia Canada that uses a wood fired still. they is plant lipids. found mostly in tails oils. they have a hydrophopic end and hydrophillic end. as the density increases (lower temp or higher water content) they all point their hydrophobic ends together and make a little snowflake. proof above 45 and they won't show at room temp, but as you lo...

When you start to mix it together it looks clear but when you have finished it has a cloudiness . Is that a louch thing from the Orange oils ?
wondered the same....if the alcohol mix is clear, and the sugar mix is clear...i'm curious why the mix is obscured.

some of the other questions: most jurisdictions have laws on the amount of alcohol you can have in your possession. even in bottles, purchased at retail from a store. You need a bulk license to buy/sell/trade bulk. (ttb bonded warehouse) you normally would not pay taxes until it leaves the bond, so ...

i'm in Canada, so it's different, but similar. Here, the municipality determines building safety codes. it all has to do with zoning and permitted/discretionary use. then the type of building, proximity to neighbours. usually they allow you to write a "letter of intent" to get answers on r...
