I’ll give the mop wringer a go. just trying to figure out if the thing would sit on a bucket without tipping over. Or does it fit onto a brute can maybe? Yesterday I blended and proofed an AG batch of corn something or other lol. Not sure what to call it because its my own frankenstein. I guess technically it could be considered a bourbon if aged correctly. 14 lb cracked corn, 7 lb malted barley, 1.5 pounds oats in 12 gallons of water. Ran 4 ferment...

Unless you're keeping heat on the corn and actually cooking it... Water needs to be a solid 212 furious boil. Corn will bring that down to about 185 +/- 5. Add BOILING water, mix, throw in enzymes. Let it sit for a while.

That water was what you were looking for. You should be giving it a good stir a couple times during the long mash, but taste it in an hour or so and I bet it will taste like sugar water. It's water and starch, the solids just settle down during the rest.

Traditionally the red provides a little bit more spice than white. I developed the wheat mix in honey bear, and threw some red in the absence of any rye. Any bourbon can use the sour mash method. Use half, for 10%, and you'll be golden.

Boiling is not 165. This is not being pedantic... you need every bit of 212 if you are going to efficiently cook the corn with a passive method. Not even a soft boil... you need rolling boil. That's the biggest thing to fix, as you did not get most of the corn potential alcohol.
