intermittent water exchange is the answer. Pool algicide might delay its development. Dont put bleach into the cooling reservoir and run it with bleach. I agree with Brian, it's not worth the effort. I have four 5 gallon barrels that I keep in my yard storage shed. Ben you are 100% correct, I stand corrected. Lactobacillus will consume sugars during ferment and lower potential ABV, but does not consume alcohol once generated. I misremembered posts on this site from years back. Makes me happier that i dont have to rush my infected mashes!

What was your finished specific gravity? You clearly had sugars in the boiler if it scorched.. either unfermentable or just not yet fermented if you ran too soon. Also what power were you running? You can't get the scorched flavor out by rerunning, better to discard and start over after a good clean...

I own #2, plates are locked into the silicone seals between the glass sections and absolutely cannot slip. I own the second one, but wish i had the first instead. I prefer running 3 plates for whiskey, and its a PITA to disassemble the column each time to try different configurations. But when running, the bubble cap plates are damn sexy!

Probably lactobacillus. Don't sweat it, just let the ferment go till done and run it. Some prefer the flavor after an infection. Lactobacillus will slowly consume alcohol so run it soon as the specific gravity stabilizes.

40 inches of packed 2inch pipe is the rule of thumb, you've got 12. I think the smaller diameter above is going to have pretty rapid vapor speed and not provide great separation. Don't think you'll ever produce a neutral product with this, but it may make a decent single run whiskey/rum still since ...
