What about the yeast? Is the White Lab brand of bourbon yeast a good selection? How much would I use for this big batch.
I've been looking for bourbon mash recipes, but having a hard time finding one. Any links would be appreciated.

Bourbon yeast, and bill
I just got a 55gal drum to mash in for the first time. I'm having a hard time figuring out how much yeast to put in. I wanted to try Whit Lab's Bourbon yeast. My bill out is: 85% corn 8% rye 7% malted barley. With having the drum to mash in, and make my percentages easy. I'm thinking about 100 pound...

A few concerns about running the Boka in pot mode. I assume I should run my primary condenser at first to get rid of the acetone. Then use my secondary Laibug for the rest of the run. lol, yes, I was referring to the base of the boiler. The keg is a good point with it already being 15 gallons. The only reason why I didn't consider it at first was due to copper / sulfur benefits. I'm from MI too. I could be wrong, so please look it up. To my understanding the permit to distill fuel is $2,000 in MI. if you want to Distill spirits in MI it's like $100.
