Actually, after it is up to temp I keep the column in full reflux for an hour for that very reason.

For those of you using these ( I have for years) do you initially blast them all the way on to heat up the wash or gradually ramp them up? I have lately been wondering if using them at full blast may lead to scorching. I haven't noticed any burnt taste in my spirits and my washes are always dry but ...

Anyone have any experience with this yeast? Just got some and was perplexed to see that the ideal fermentation temp is 68-77F. Seems awful cool for a Caribbean style rum ferment.

I make my rum Jamaican style using live dunder as well as backset from the previous run. Lotta variations on this style but I have found what works for me.

The "cuts by temperature" method by Arroyo almost requires refluxing the wash for at least an hour. I have done this and with my rig fores and heads get VERY stacked at the top of the column. I made my cuts by the usual method and not by temps and came up with very complex distillate. I do...

This is bad all the way around. I used to work in a burn ward. Burns over 80% of the body is pretty much a death sentence. Can't see how they survive unless the burn % is wrong.

Having a time finding any kind of molasses here in Central Florida which is odd because south of us is a HUGE sugarcane growing area . Had my local feed store guy get me a 5 gal container. Looking at the label, there sure is a bunch of other crap besides molasses. Would you ferment this stuff? If so...
