Re: Prickly pear

Singe the thorns with a propane torch to ease handling. I've macerated them and also made a apple juice and prickly pear cider also. Not a mead so far. Also,Jack Keller lists a prickly pear wine on his site. The green pads, not the fruit, are good to eat sliced thin or in small cubes and fried into ta...

Re: Single Malt Barley on Merlot Chips

This is similar to this thing I've been doing. Except I've been using toasted oak fingers, cherry/apple Melomel for the wine, and Booners protocol corn whiskey(heirloom corns) and vin13 yeast for the spirit. The goal for me is to make as complex of a spirit as possible from a simple corn whiskey. At...

Only ~2 hours away? Guess who's going on a road trip soon... I know a couple guys around here have started using the Bloody Butcher for their commercial bourbon. Never heard of the rest. Bloody Butcher 110 Day: Large girthy ear Never thought I would be interested in something like that. I'm sure yo...

Re: How to use powdered enzymes?

Based on my limited experience with powdered enzymes ... I've not found a true high-temp alpha so you'll need to modify your Booner's protocol (which I also follow). So, if you're accustomed to taking your strike water to 200F+, and adding the SEB HTL almost immediately after dumping it on the grai...

How to use powdered enzymes?

A lot of info on liquid but... I'm clueless as to powdered enzymes. Anyone want to clue me in? Is it still alpha and gluco at their respective temps or what? Someone give me the rundown please. If possible, using the Booners protocol as the base but substitute powdered for liquid. Thanks, Jb~n~tx

Re: Stainless Steel Jerry Cans For Storage?

IF the person you bought the keg from is a garbage human being and stole it ... just how does that injustice fall onto the purchaser? Fencing stolen goods is just as criminal as stealing it in the first place. It still belongs to the original owner. Geoff Here's a riddle for y'all. I go to the stor...

Re: When to start them into it

Come to think of it, I don't remember not knowing how to make wine. I learned from my grandmother. Every 3 months or so she made fruit preserves.(jams, jellies, and wine were all preserves to her) It was just a part of preserving fruit. I think she was probably holding me on her hip as a baby while sh...
