To be honest I have both oyster shells and egg shells, and best i can tell anyone is "if" you need something for pH issues, use oyster shells for that and save your egg shells for your coffee maker.

I'm from the school of "if it ain't broke, don't fix it"! I use a pipette to test a sample of my ferments along the way, and only add shells to it if needed. It's a lot harder to diagnose problems if you over complicate things from the beginning, keep it simple, humans have been fermenting...

Nicely done, been making rice wine for drinking and distilling for many years, recently started adding black (forbidden) rice into my ferment. Using one third black rice and two thirds Thai jasmine rice, adds a nice floral note to the wine, but haven't made enough to distill just yet.

My two cents, I have one and it's a pain to work with, yes (as was said) packing it with scrubbies complicated it a tad more. I even capped off a copper tube and suspended it in the center, this was a slight gain, still had to keep my still dialed down way below my attention span.

I like to use my fruit press lined with jersey material from the fabric store, sometimes one or two layers will do depending on what I'm pressing. May take a couple hours cranking it down, but my yield went way up! Then I give it a day or so to settle again before racking it off into the boiler.

My 2" column has a different resonance depending on how I configure. Fully assembled it's eight feet tall and full of marbles (most of the time), stripping it has a low rumble/shake, and reflux sounds like a big loud rain stick.

I generally go a tad simpler than that, I just take a ziplock sandwich bag full of salt (sand or?) and place it over the hole. Be generous about headspace on foamy ferments and you'll be good to go.

Have brewed and fermented just about everything since the 80's, distilling completes that hobby skill set. Along with sewing on my vintage machines, distilling is how I relax and recharge.

Only thing I would be worried about when it comes to distilling fermented popcorn is the toast on the outer skin (pericarp) of the kernel coming across.

Personally my all grains/oaked spirits get aged, some barrels others oak sticks from my own trees. I have a few things that taste good right of the still (after adjusting proof), and it's almost painful to not partake. However that stuff is beyond epic after aging white oe on oak. Patience is your best friend.
