can I use mash vs using backset
I am currently making ujssm and it has been finished fermenting for 3 days I took the wash off the grain befor second fermentation started and added some water to keep yeast healthy. Can I use some of the mash to add back to the grain as backset or does backset have different qualities. I can't run ...

It had a white oily fiim on the top of the mash and it had bubbles it the film wash tasted just like vinegar. And also I have amaylas enzyme, I usually put in when I cook the corn with a lil bit of barley then after it drops to 150 f I put more enzyme and about a gallon of malted barley.

boiling corn for ujssm??
Can boiling corn when makeing a ujssm reduse chances of infection in the mash? My last two mashes caught a infection I think I left them to long and they started second fermentation and turned to vinegar. So I was thinking boiled core will kill any bacteria on the corn also creating more corn flavor...

Yeah iv seen wood mash boxes they used back in the day but I was concurned about heating it to boiling temp, I'm sure they didn't heat the mash boxes that mutch.

Is it safe to use wood in your mash pot? I was thinking of taking a pice of oak cutting it to fit down in the ss pot with holes drilled in the wood, and have the wood suspended a inch or two above the bottom. Thanks "rubber duck" and it is ground around 5to8 pcs per kernel. Is that grain bill close to possibly making a decent spirit? It just somthing I threw togather not following a recipe.

No its a 30 gallon fermenter and its full so I'd say 26 gallons of water I forgot to add I toped the fermenter off

Iv made mash before and it never smelled like this it smells like rotten corn with hint of rotten mallasas and eggs like I gag when I get close to it

I start a mash yesterday 30 lbs corn, 8lbs malted barley, 2 lbs rolled oats and 12 fl oz of malasas boiled 8gal of water added corn oats and some barley let sset for a hour boiled 5 more gals of water dumped it in let cool to 150 deg and added the rest of barley and a little amalase enzyme. Ok sounds good. Wat about the vapor that is condensing in the lyne arm and dripping in the thumper is it possible it could over fill the thumper?

Its a pot still I had trouble getting paste to harden bc of the vapor was condensing and keeping it wet and also I could here condensed vapor dripping in the thumper
