Re: uncle jesse's simple sour mash method

Quick question for you guys,

I had a second gen UJSM bubbling in my fermenter and i didn't get a chance to distill it before i had to leave on vacation. Its been in the fermenter for about four weeks now, will the long time in the fermentation cause any problems/dangers etc

Thanks

Re: been using the chem resistant hosing,

alright thanks guys this info has been most helpful, I was intending on switching to copper simply for aesthetic reasons, i never thought the hosing would effect the taste, Im gonna try the method you described Usge, it seems that would be the easiest way to make the copper pipe removable for cleain...

Ive been running my UJSM through a Brewhaus pot still, and have been using the chem resistant hosing, what advantages does using copper have? and how would i go about attaching copper pipe to the the stainless steel column, would I have to weld it on, or is there some detachable method I can use, pe...

Re: Running a Stripping Run Questions?

I did my stripping run today of UJSM and it went as such, any comments or advice would be greatly appreciated; Turned the burner on very high heat to get the mash up to temperature, it took about 30 min to get up to 60C at which point I put on the cooling water. The temp at the top of the column beg...

Re: Stoppping and Starting Distillation

are you making nuetral or flavored? by flucuating do you mean, it started at 78C and slowly crept up to 82C, or did it really hop around...78C....82C....80C....79C....81C....etc? Im making UJSM so im assuming its flavored Initially the temp did stay at about 78C but then later on it seemed more to ...

Running a Stripping Run Questions?

OK so i want to do a stripping run of my first generation of UJSM and i just had a couple questions. Im going to be using a Brewhaus 30qt pot still with a bayou classic burner For the stripping run i want to run hot and fast, discarding the first 200ml then collecting down to about 25%abv, my questi...

Re: uncle jesse's simple sour mash method

Anyone know about any positive or negative effects of using turbo yeast in the UJSM recipe? I mixed up a batch in my fermenter using Prestige 48 hour turbo yeast about two days ago and it was bubbling like crazy, now it has slowed down and almost stopped and im pretty sure its done fermenting, which...

Re: Stoppping and Starting Distillation

I'm running a Brewhaus 30qt pot still with a bayou classic outdoor burner. I originally had an electric hotplate and my temperatrue was fluctuating 5 to 10 degrees either way from 78. Then I got the bayou classic burner and my next run on it i was able to maintain the temperature, But this run it ha...

Stoppping and Starting Distillation

Are there any dangers/problems associated with stopping distillation, waiting several hours, then begin distilling agian? I ran my still for about 10 hours yesterday with a 25l wash, collected about 1 liter of distillate between 78% to 72%. Turned it off for the night, then restarted it this morning...

Redistillation of Aged Spirits

Are there any dangers in re-distilling toasted oak aged UJSM? I have about 800 ml that i diluted down to 40% and dropped a 3/4" x 3/4" x 1/2" medium toasted oak cube, this distillate was produced from my first run of UJSM, its been agings for two weeks now and it just doesn't taste go...

Thanks Husker, your info is most helpful. I'm going to be experimenting with both of your methods. Just a quick question, my spirits that came ou...

Re: my first batch of UJSM

After running my 20 liter wash of UJSM for 7 hours i have collected the following distillate

150ml - 80% abv - discarded this

400ml - 69-70% ABV

250ml - 60% ABV

just to double check i should be keeping everything down to around 20% ABV to use again in my second run correct?

Whats the amount of spirits one should expect to produce from the UJSM recipe if followed exactly?

ie a 20 liter wash produces how many liters of distillate?

Re: my first batch of UJSM

I'm going to try out the steel plate idea now, assuming i can find one, ill most likely be looking into a gas heating source for my next run, i don't trust my ability's to modify my hotplate, can anyone recommend any good gas burners.

Ok so can you explain how exactly I would perform this full on bypass procedure? Or would it be easier for me to get a gas burner?

Thanks for all the help so far on this guys, much appreciated

Re: my first batch of UJSM

So is it safe to assume that the thermostat in the hotplate is constantly cycling and causing the temp in the column to fluctuate, is there any way to remedy this, I know gas burners are easier to control but is there any safer alternative.

Also the first 180 ml i collected after dumping the initial 150ml came out at 70% ABV, I noticed that UJSM calls for it to be 80 to 70 %, is this normal

Ive gotten it up to temp and am now collecting spirits. Ive been having a hard time keeping the temp at the column steady, it fluctuates between about 75c to 85c. Its starting to level out and fluctuate less now, Ive been running it for about 4 hours now and have only collected about 500ml. I have a...

So im going to run my first batch of UJSM through my still today. I was wondering what i can do with the spirits I get from the first run. Should I collect everything after I dump the first 150ml until it starts to come out at about 20%abv and then run it all again through the still a second time?
