No experience trying to actually ferment pineapple, it's pretty acidic.
A while ago I added some pineapple to a fermenting pannela wash for rum, went through two bags of oyster shells on that ferment. Acidic - yes, did it add wonderful flavors - no.

Well my son's girlfriend borrowed my large erlenmeyer for part of her halloween costume, still waiting for the return. So that flask is a wine decanter and it worked well.

Re: 5 gal barrel ?

so what we use at the winery to sano barrels is a ozone generator ( peroxide maker) so a quick splash of peroxide and a rinse and you should be good, and fill that barrel.

Re: Kveik choice for rum

So just started a 50 gal ferment of Muscavdo sugar rum using Kveik Hornindal. I did a starter using two vials of yeast and two cans of proper starter on the stir plate for a little over 24 hours, if my math and thinking is correct that should give me slightly a little less amount of yeast for that b...

Well after having many barrels ageing of what I thought was the best I decided to up the pot. So my last batch of rum I took better cuts, less heads and no tails, D...

OZ, what level char do you purchase with your barrels, just curious and by the way, your final product looked great...
My go to barrel is a 5 gal Gibbs, med toast and a #2 char. And the color was great, setting that glass on a brown desk might of given it a richer color lol

Re: Making cane molasses vinegar

Yeah Weegie, this thread deserves to stay alive. I would toss in a suggestion of using kombucha mothers (scobys) to make the vinegar as they are a symbiosis of yeast and acetobactor, and are now easily obtained in stores. Years ago to get started on kombucha you had to email some guy and he'd drop ...

Stay safe brother, gun violence has always been big in your parts.
I remember my first visit to NOLA back in the early 90's it was the first day of the parades and someone shot Santa dead off the float he was riding on. Probably some bad blood between them.
