Tasted and pulled the rum off the flavorings today, five days and the ginger component was starting to take over. It tastes good now but I'm planning to let it age for a year or two.

So got my pecan shells today and did an oven roast/toast slow to375 about 50 grams added to almost 4 liters of 75 ABV run and then added 10 grams of each, bitter orange, all spice berry, and ginger root.
Will age it for a while might be good or ...

I didn’t even realize there were areas in the US that still had closed schools until I read about the Chicago debacle. My wife teaches in a smaller district in the largest city in Texas and has been face to face since September. My kids are in Catholic school and have been the same. Luckily schools...

This becomes easier once you build up a supply, I have actually forgot I had some aging now that I have multiple 10 liter barrels. But I warn you, it is a pile of work. Each one of those wooden staves needs to be screwed into the steel rings, or the whole thing will fall apart. 6 hpp[ rings x about 25 staves = a lot of holes drilled, and a lot of screws that need put in. Just a warning....nice looking things, but lots of work ...

NZChris I guess that I miss typed and what I'm trying to make might not be considered a spiced rum but rather a flavored rum, after all ageing in wood could be called aged or spiced. We are after all adding more flavors to our product. I'm planning to age this for a couple of years.

This really sounds good , I have two gallons of keviek yeast fermented rum at 80 abv, it has a great buttery flavor white but thinking that spicing it with some toasted pecan shells, a bit of bitter orange, and a bit of allspice might make an interesting drink in a couple years. I don't want to wast...

Also a trick if not method I learned from a master bicycle frame builder who did all of his joints with silver was to use the torch in three dimensions, up and down through the tubes and lugs but also closer and further away to control the temp on the joint. A delicate balance.

So it's difficult to measure ABV after you added sugar with a hydrometer, next time dilute first and then add the sugar.
