Thanks NZ that's what I thought although I have no idea what it should taste like......... :? It is going to impart it's flavor to your product, so let your taste buds and nose be your guide. If you don't like it, start fresh. Thanks again for helping me out NZ... that's exactly what I'll do.... :D

You'll probably get spanked if you make a habit of it. I just had a taste of two year old white dog and it is very nice, but I don't think it changed much after the first few weeks. Do you think I could use the refrigerated back set................. Someone must have some experience with this.........

Please excuse my lack of sobriety... but how did you get "Starting new run with Backset refrigerated for 1 year" into the topic "uncle jesse's simple sour mash method" ???? Yes, strange how that could happen. I didn't know I couldn't change the subject, I apologize to the admins...

Re: uncle jesse's simple sour mash method
Ok I have another question. I have 8 gallons of fients. 3 gallons at 70% 4 gallons at 40%. I'm thinking of combining them for flavor, 50 tails 25% heads. What I'm thinking is using the back set to dilute this, hoping I'd pick up more flavor....
Any thoughts???

Re: uncle jesse's simple sour mash method
Sounds legit buddy. No red flags other than your yeast being mostly dead/rehydrating it but you said there was an obvious high krausen so rule that out. Mine finishes easily in 3 days at 80F but I do add DAP, Epsom, B vit tabs and Calcium carbonate. OK well this is what I did, Hasn’t changed much f...

Re: uncle jesse's simple sour mash method
Thanks for jumping in BP..... I pitched 1 cup of distillers yeast initially, for a 14 gallon batch, little bit more than Jesse recommended. Temps during ferment were 85+- initially eventually dropping to 75f I then added a small heater but as some one mentioned earlier in the thread it burnt the cor...

Re: uncle jesse's simple sour mash method
I could use some advice.... I'm only on my second generation of UJSSM, my first wash took 2 weeks to ferment, my second wash just took 3 weeks and finished at 1.01....I did check the ph of the last wash which was at 4.5 so it was kinda low, curious how best to raise it? It seems like I'm leaving at ...

Within 20 fermentation started in an hour it has a half inch cap. I can see the particles of corn raising and falli...

Re: All Bran Recipe
Thanks for the kudos, Jamco... One thing I want to add is that acid IS required to adequately invert your sugar, otherwise just dissolving in hot water will suffice... The act of inverting separates the glucose and fructose from the sucrose which, theoretically, allows the yeast to perfor...

I was surprised to check this batch this morning and it's still fermenting, the SG is still at 1.01, I'm curious if the amount of solids suspended in the solution could increase the SG, I believe I've read that in this forum somewhere. I added a small amount of yeast a few minutes ago, and will con...

next time I'll add less nutes or none at all, get some batteries for my PH tester too  Get the batteries now, or at least some pH strips. With that much backset in a sugarhead you could be quite acidic by now. You mention a 20 gallon fermenter, if you have 15 gallon of wash with some headspace...
