If your looking something for a comparison, when you accomplish your muscadine heaven in a bottle, Rock Town Distillery in Little Rock AR makes muscadine shine. It is the bombshizzle. Good luck!

That's a shame ... corn meal and liquid enzymes, using the "no boil" protocol, is about as easy as it gets for all-grain. Only way to go with meal or pulverized corn. Your worries will be gone. Your starting gravity will get better over time. Insulate and retain that heat if your doing a ...

If you use cracked corn you should 3lb per gallon. Pulverized or milled you can get by with 2 lb per gallon.

To insulate is the key. I used yoga mats to get them off the concrete. Wrapped in sleeping bags these AG, US-05 ferments hold 67 degrees in a room that is 50 degrees.

Test your well water for iron. If it is iron free your good to go. My well water is extremely hard which is good. Full of limestone/calcium which is good for yeast. I have experimented with all kinds of water. Well water is the best in my opinion.Bigbob wrote:Well water is fine to use, go for it!

Pond pump in knee high pantyhose. 300 gallon per hour. 5 gallon per minute. 10 gallon mash.....poof. In the still. That pump don't move enough liquid or have enough turbulence to disturb a settled yeast bed.

I'm a huge fan of US-05. Ferments very clean. After airing out, I'm not sure the fores even smell that bad. Very little esters. It's pricy but to me it's worth every penny.

I believe that they higher your sugar content, the less flavor will carry over. The higher the sugar content, the more heads you will have. I have experimented both ways and the mouth feel and flavor is better when I use less sugar.
