I’d suggest proofing down to 25-30%abv with fresh ferment and low wines if needed to get a full’ish boiler charge.

Re: Automated continuous still
I’ve had a bit of time to run about 29 gallons of wine through this thing over ten days. Babysitting was minimal and I ran it when I was around so I could keep my eye on it. Tweaked the settings a bit along the way for the “vodka” recipe. My goal was to reduce four carboys down in size and i’m happy...

Be careful down there in the delta booze pipe. It ain’t all pretty.. unless you like that kinda thing. https://www.shackupinn.com/ There’s a path right up by the shackup inn that old highway 61/49 crosses over. You can walk down there in the middle of the night and it’s a little creepy. IMG_2943.jpeg

Robert Johnson been playing down in Yazoo City and over at Beulah trying to get back up to Helena, ride left him out on a road next to the levee, walking up the highway, guitar in his hand propped up on his shoulder. I go to Memphis for work fairly regularly and will always head down on a Friday to spend the weekend in Clarksdale. First off - Be careful.. It can be sketchy. I can recommend staying at the Shack Up Inn in Clarksdale. Also, make sure to get some delta tamales. Take a drive out to the levee if you g...

Re: 1 litre alembic pot still huffing on vinegar run?
You ideally want to run your product condenser with a temperature gradient. Cool at the product output and hot at the vapor input. This will help prevent huffing along with power management using a power controller. If your hotplate uses a temperature thermostat and cycles. The cycling will also enc...

Same as others. Age around 60-65%abv.
I proof down directly from the aging vessel into my glass at a 2:1 ratio of spirit:water so it ends up in the 40% area give or take. Lately I enjoy slightly under 40%.
Cheers,

I have a small 2.5g alembic still with the "rotating top" riser and larger 16g boiler that I use an 18x3" riser into an "onion head" with a sight glass before the lyne arm and reducing down to a 2" shotty - both in pot still mode and I modified the alembic to use a 3/4&...

Wow! If the acetobacter have gotten into it they may have converted all the ETOH to vinegar... Might try cooking a cup or so in a pan to see if it produces ETOH vapor before running the whole thing... Even so, it also sounds like a prime candidate for a cleaning run if it has turned to vinegar if/wh...

+1 on Stoney’s suggestions. Also may want to consider a packed column to get more HETP’s for your height. I think vodka distilleries use 20+ plates.

Re: How long wil low wines keep?
Feints leave a lot behind in the boiler - maybe somewhere around 1/2 to 2/3 volume stays in the boiler?. I’ve seen some “floaties” kind of film/particulate in my low wines before. I get a little bit of a puke too maybe about 1/2 the time on a strip too so haven’t really tracked it in that much depth...

I say run it! Has it been exposed to the atmosphere? ie; could anything have settled in there? I wonder if you could fish out some and see whether it's hard/granular or oily clumps or whatever... If you get some out and can fortify with a little higher proof does it dissolve back into higher proof s...

My concern with marbles is any potential lead contamination. Not sure whether that's even a thing but I'm pretty sure that marbles don't in general need to be any type of "food grade".... Who knows exactly what they're made of if it's not specified or documented...

Re: An easy little trick with hot oak
I'm not sure how quick a vacuum setup would do this. I keep my bulk storage wines in carboys under vacuum and when I add oak early on in the process it still takes a couple weeks to fully water-log (wine-log) the oak and have it sink. I will regularly top up the vacuum and air bubbles do come out of...

Recommend using a Tried and True recipe instead of turbo. You'll get better results. A couple of questions and notes: Did you do a cleaning run with vinegar and then a sacrificial run? Sounds like something was either dirty in your PC or the system was perhaps puking.. The distillate should be all c...

I've looked into a small'ish lab still setup dedicated to gins and may do that one day. I'd spec it out with vacuum capability so I could cook at lower temps..

This looks great and I'm considering wine cellar options in the near future.
I did discover that a uhaul storage facility near me has wine lockers that they keep @ 55*F 24/7. A 3' x 3' x 5' locker is just $15/mo and holds about 400 bottles in flatpacks.

JD isn’t the only LCP “Tennessee Whiskey” but it is probably the most widely consumed. If you haven’t yet, try some others if you get the opportunity. I have yet to implement it in my TN Shed but do have grand allusions to experiment

Re: Marble magic and a theory yet to be proven
Maybe packing sections with some space between them would help alleviate this so it's more like plate sections but the lava rock or marbles (less thermally conductive material) would probably do better with more HETP's to have a straight through longer (or taller) packed section overall... Cheers! j...

I keep coming back to this as a potential stripping solution too but then think a pre-heater might perform better (ie; faster) for a semi-continuous stripping production...
