My great grandad was illiterate. He could get by but had trouble reading and such. Be damed though if you shorted him a dime or dollar. He was keen on numbers. That I didnt NZ thank you. Have you thought about sticking them together? Using the byproduct heat from your ferments to heat your stock? It may cause a slight drop in the ferment temp but I imagine it would be minute.

:ewink: Indeed, I Wood like to see it as well! I did forget about the end grain. I do think there is a good thred on end grain...I have read that angels share removes some unwanteds but also depending on the relative humidity of the storage area it can either raise the proof slightly or the opposite...

If i may think vary linierly... If tryin to match the same volume to surface are as a barrel in a jar. Your going to/ are looking for a looong ageing time? NZ the differance being ( one of many things) things like angels share? Although that can be replicated by exposing the likker to air at interval.
