Re: DIY French oak chips
Chips are ok for wine but for aging distilled spirits they have too much end grain according to many. You should look into dominoes or sticks
You will want to toast them after seasoning/drying. There are plenty of threads about this.

It sure looks like it leaks a lot. Id have to imagine that flour paste could be used there but that'd be a real PITA.

Never tried the edible ones but I've had the plant based plastic ones and paper ones, the paper definitely inferior to the plant based/cellulose ones.

Galvanized metal is nogo for food as far as I've been told. Totally paint it with a heavy duty protective enamel paint id say.
Ss for removal...scraper, solvents, sanders, strippers

The t500 boilers I've seen have a minimum fill mark. I wouldn't go under it. I melted the plastic on mine using it outside of the manufacturers guidelines. I'd love another one though, the problem with mine was me and my crazy ideas.

Angel yeast can be used as a regular high temperature enzyme (Denatures at 90C) as it contains a large percentage of Alpha Amylase and Gluco Amylase. However when used this way, the Rhizopus will be denatured at temperatures above 60C and the low temperature conversion feature will be lost. Use dis...
