Apple brandy
This spring we were offered a good deal on some fresh pressed cider of 16 varieties from the mountains in va. We had a very mild winter and the apples kept producing thru the winter. I got 30 gallons of this sweet necter and the OG was 1.053, we got it to 065 with the help of some invert sugar and f...

So sorry for the late response, work and family has taken over full time lol My works with the butter rum is still solid the original way. I am getting repeated results and loving every moment when I do so. Have you done this? I have also been experimenting with HBB with this process, while the HBB ...

Re: Butter Rum
I reckon Ima make 50 gal ferment next weekend after the HBB is finished stripping and squeezed. I still have some aged dunder from 2017 that was sterilized and sealed. Figure 15% total volume will do for some nice flavors and will add 20% to final spirit run for some complexity and funk. Been holdin...

Re: Fruit wine under airlock?
Certain yeast will do better for aging after a rack, 71B is horrible but QA23 Is great for fine lees. They'll clean up behind themselves and wont impart naties if left for up to a year. Scottlabhandbook is my go for yeast selection, they also give very detailed descriptions on charachter and best us...

Looks like she's finished now, FG is 1.042 13.65% Im going to just rack this as is for the moment and let it clear some more before going into the barrel. Re: Mead
I love buckwheat honey, it's probably one I use the most for backsweetening when I only need a little touch of complexity and sweetness. By itself can be much for many as it's a very strong and bold flavor but I very much enjoy it. I still have a half gallon of pure buckwheat and tart cherry melomel...

Re: Black currant and blueberry melomel
As of now the ph is right at 2.9 and sg is 1.048 The ph in wine and mead are so much different than in an AG mash and I had to learn that from some really good mead makers. 3.2-3.6 is the range it prefers from my learnings. Yonder, nope!!! No step feeding lol With the starter and nutrients and degas...

Re: Fruit/grain spirit?
In all honesty I wouldn't waste the fruit mixing with grains. They are hard enough to find the fruit flavor alone without additives so if you add another dominant flavor I believe you will never get anything other than the grain flavor.

Re: Making me some rum
When I do molasses rums my sg never finishes at 1 or below, at least with a hydrometer floating because of the solids and unfermentables. 1.020ish isn't uncommon but i go by taste alone on these not by numbers. Im sure you know but I'll state anyways for anyone who doesn't and is reading this, molas...
