Am in a group in facebook. No one seems to post anything anymore. But I did to see a bunch of mason jar thumpers. And ton of people making Popcorn Sutton a god like figure. It seems that a lot of people get into this hobby to fell like outlaws and not to make a quality spirit. But to each their own.

This one is on my to-do list. The Mexican markets near my house have them for a good price. I was thinking about an agave/prickly pear brandy. Maybe even cold smoke the tunas/ prickly pears.

Yeah am sorry I meant to write the all agave syrup with DAP added. I was a bit weary about doing an all agave nectar batch. But I am going to give it a shot.

Thanks! Yeah, I will go for the 21 missions syrup next and see how it differs. I added DAP initially but didn't feed anymore after that. I filed a two quart jar with white and had enough left over to fill a bottle to drink for now. Will let the white age a bit in the jar to see if it changes. Will ...

Well Pope convinced me to buy some 21 missions agave nectar. And to use it as a stand alone in a batch. So am going to do a batch with pure agave nectar and another one with both the agave nectar and the agave plant. I can't wait to compare both. Am glad that we have enough interest in this subject ...

To make a decent agave spirit you really need to get some agave. You won't get the flavor your after with just agave nectar/syrup.

Sounds like a good recipe. But I don't think you'll be able to taste the agave. It will taste more like a whiskey.

I've smoked my own rolled oats. And infused my low wines with the oats. It worked out well. But it can become very smoky. So becareful.

My recipe was 5 gallons of low wines and 3 gallons of fresh make I filled my boiler nearly to the top. And I still put all the fibers in a Muslim bag. I think all this add to the flavor. I ran one recipe through one plate with a packed column and a bit a reflux. I didn't really care for the flavor ...

I was thinking of it. Maybe with tunas fruit or guayabas. Am kind of weary of using turkey breast. Besides am not fond of the flavor of turkey.

I distilled with all the fibers in the pot. I used a flour sack which I made a bag out of and I tied above the heating element. I got the idea from when I make gin. It worked out really well.

All that smokey-ness comes over late in the run. I found that the tails had the best flavor. My hearts taste a bit like tequila but very neutral. I can't wait to hear how your run goes.

I'd add some pectic enzyme to assist with breaking down the mezcal. Wish I could get some. If I get out to LA i'll figure out how to ship a 50lbs bucket. If you look at my original post you'll see how I mashed it up and added water and mashed it more. I just strained off all the liquid and threw all the pulp in a painting straining bag. I just threw all that in the fermenter. It worked out great.

I never cooked the agave. Since that process was done for you already. But let me know how it goes. As for the agave/terpene run just add that run to your spirit run your currently fermenting. Am sure it will work out.

The yeast nutrient I used is the LD Carlson. I bought it on Amazon. It's cheap and works well for both brewing beer and distilling washes. For the agave spirit I use 3 heaping tablespoons that I boil in 3 cups of water and add another tablespoon of bakers yeast. Let that boil for like 3 mins. That's...
