One year in a charred barrel has done my HBB well. Samplers swear they taste honey and vanilla and want to know how much I put in there -----ha! Time to refill the barrel and start over again and I hope there's enough woody goodness to go another year. New folks---- do this recipe and treat yourself...

So I just racked to secondary and there is so much sludge at the bottom I lost about 2.5 gallons in a 6 gallon wash. I see some others had similar problems in the thread. Yeast consumes sugar (and added nutrients) and expels alcohol.
That sugar can come from grain like corn, or from a sack from the grocer.
