Re: Double-wall boiler safety/operation
Birrofilo you are assuming 100% efficiency or heat distribution from the jacket to the inner kettle which is not the case. Also pressurised steam will pass 100C. I run my jacket around 15 PSI and believe the steam gets over 110C. Last of all steam is more efficient at transferring heat. Cheaper to r...

Re: Double-wall boiler safety/operation
I have a BM setup with agitator, slightly bigger than yours MtRainier. It's probably my favourite toy of all time. Love it to bits. I hope you are loving yours as much! I'm surprised more people on here don't have one, but I guess for some it's a bit of an expensive hobby investment. Did it turn out...

Thanks for all the input and comments. For me it's grain season for the next few months, mashing and distilling all on grain bourbon.
When I get back into doing Rum in a few months I will report back.

Re: Increase ester count with Hydrochloric acid?
Was just reading through the parent site for a different reason but found this which I will quote: "Ester formation in the still and during aging Esters can form anytime an alcohol molecule is in the presence of an carboxylic acid and a catalytic acid. This is mainly attributed to Fischer Ester...

Re: Resting/Airing Out Fresh Distillate
My non scientific version Coz it lets some of the lighter alcohols that we don't want to keep evaporate off into the atmosphere .....by doing this we make it easier for our noses and taste buds to distinguish between the jars we choose to keep and those that we don't. At the same time we are also g...

Re: Increase ester count with Hydrochloric acid?
My two bobs worth.....if someone cant make a good tasting rum without filling the wash with acids and other strange ingredients they really need to look at the distillation and oaking/ aging methods they are using. The KISS principle works for me. I completely agree with this comment. If you can't ...

Small quantity 0.1% of your wash or low wines, personally I don't see this as dangerous.
Both the Hydrochloric and Sulphuric acids are commonly used in food production.

Increase ester count with Hydrochloric acid?
Hi All, I have followed some of the threads regarding increasing ester count by using Sulphuric acid. I gave this a try a few months ago and am keenly waiting on my rum maturing and ageing before I sample and tell the difference. Long before reading up on the threads where the likes of Der Wo talk a...

Re: Rum Oils?
I'm with Saltbush on this one. I collect as much tails as I can and add them unto the next batch. For the record I'm yet to try dunder.
Another good debate is cleared wash or everything in the boiler? I'm all in and convinced this gives great mouthfeel and flavour depth. But I digressed sorry.

Re: Double Fermented Sour Corn Mash from Scratch
Squeezed a batch using this method this morning. After cooking the corn, the smell was pretty nice, reminding me of some other ferments that ended with a nice lacto infection. The smell coming from the ferment makes me think there's something to this approach. I used corn meal, and used some extra ...

Re: Where can I buy panela in Australia?
I would hazard a guess that it's cheaper to add some sugar back to some good quality Aussie molasses than to buy imported panela/jaggery/whatever. If you have a friend who works in a mill, do a deal. Don't have any mill working friends. Ohh but if I did that would be soo amazeballs :) I have done p...

Where can I buy panela in Australia?
Just throwing it out there to the Aussie crowd... Where can I buy large amounts of panela? Ideally I would be happy to purchase 25-30 kilos of it.
I do a lot of rum and would love to give panela rum a try.

Maybe more of the "butter" will become more prominent after oak and age. Everyone's tastebuds work different.

OK, so after distilling a couple of batches and letting them air for a week I came back to do my cuts. By taste of course. My "normal" rum recipe is bang on the same as butter rum (without the 135F treatment of course). So this gives me a good base line for a comparison. My distillate doe...

Thanks for the safety tips guys. Although I'm across these if never hurts to constantly remind each other of safety.
Ps I'm sure I could have purchased in my home town it just takes longer and more effort. SA is a pretty sleepy place.
