I just had to chime in w/ my good results on this. UJSSM style using chicken scratch (wheat, barley, corn, no additives or preservatives). One liter of conservative cut @ 64%, about a 3 inch piece of med+ white oak spiral. 4 cycles in the mic up to 150 and cooled on the counter. I was not impressed ...

Awesome write up! I’m from WV also, but have lived out west now for quite some years. I’m making way better stuff than the rotgut I grew up drinking. I’ve been running a small still also. One thing I’m glad I did pretty early on was to buy a 5 liter barrel from Oak Barrels Ltd. and fill it with UJSS...

That’s what I would do if I were you. It sounds like you may also need a more powerful heat source if you are having that much trouble getting below 40%. I tried a hot plate at first and not only did I have trouble fully completing the runs, but it took forever.

I run my strip runs down to 10%, especially on rum. That makes my low wines end up between 35-40% which is perfect for the spirit run. You left a whole lot of rum flavor behind if you shut down at 40% off the still.

I just bottled some UJSSM that I had in a new 5L barrel from Oak Barrels Ltd. for 10 1/2 months. I would not say that it is over oaked at all. It went in at 118 proof. Is that 20lbs for 5 gallons? If so, that will be a very sweet mead I would think. I usually go 2.5 lbs/gallon. 3 is too sweet for me. Mead is my favorite thing to drink also.
