The reason pH is confusing is people toss the terms around in weird ways. pH 1 is acidic, pH 7 is neutral, pH 14 is basic (caustic). The number is logarithmic, so a pH of 5.0 is 10 times more acidic than a pH of 6.0, a pH of 4.0 is 100 times more acidic than 6.0, etc. If you read Woodsheds recipe h...

I had assumed that you had already started a Mash. Everything looks to be in order and tasty. If you weren’t doing corn and unless your water supply is suspect, I’d say just mash. Did you add anything to your “mash” to bring down your starting ph level? What’s your grain bill and method of mashing? Mash bill is 16lb corn, 5lb 2-row, 5lb red wheat, 1lb honey malt to 14 gallons of water. I’ll be adding enzymes to break down the corn and throw in my malts once it hits about 148...

Hmm. I haven’t had this issue, my only guess would be it is still running too fast. Maybe try and slow it down a bit more and see if that helps. Have you tasted it? Close to heaven is the best description :)

Thanks blackstrap, after a week the peach is a little more pronounced and goes down way too easy. I highly recommend this recipe, it is very easy to make and as long as you use a good yeast it will yield a fine drop! I used distillers yeast if I didn't post that info above. Let us know if you make it!

I just ran a peach brandy through my brewhaus rig, same as yours. It worked perfect and tastes amazing. I run as pot still with the column extension and with 2 sections of copper packing. Blackstrap I ran this through my 15.5 gallon pot still.

NzChris I did just that, haven't run it back through but honestly don't think I'm going to. It's delicious as is and I can live with 1 batch of lower abv. I wanted to oak a jar but is the abv too low for oaking?

Running my first batch of peach brandy now, boy does it smell delicious right off the still. After 2 days this is fermenting like crazy! Using a 75qt extreme cooler and man does it hold that heat perfectly, highly recommend! Super excited, started this last night! 22# canned peaches in heavy syrup 6.5# sugar 8 gallons water 2 Tbsp distiller's yeast that I first made into a starter og was 1.049 Fermenting in a 5 day cooler in my basement cellar, it is a little cooler than I would like but it's what I have so that's that....

For those big ole 32gallon brute cans are you all just drilling a hole in the lid to attach an airlock or is it not needed due to it not being airtight?
