Depending on the size of your thumper you could run some wash in the boiler and some in the thumper when you strip it and then do a regular spirit run, or do it the way you described, either way will work out fine. Looks like pro-style bubble caps/pro caps. It's regular bubble caps but with an integrated downcomer in the middle of the cap.

I think you may want to avoid a 1/4" vapor path. If your still pukes any solid and it gets plugged you may get pressure build up in the boiler, which more or less turns it into a bomb.

I ran 25l in a 30l fermentation bucket and that worked 4/5 times. One time it foamed so much that the airlock was catapulting foam up in the air like a little fountain.
If you decide to run with a small headspace make sure you keep an eye on your ferment and have a blow-off tube close as hand.

I think it would be very interesting to use the model to see what the differences would be when running with different volumes and ABVs in the thumper, like wash/water/low wines.
