Re: Do we have any outdoor cooking enthusiast around

Whats you’l thoughts on what I should do …. if anything . I was hoping that maybe there is an easy way to strip off the enamel and just season it and use as a cast iron pot . I do not know of an easy way to remove all of the enamel...Its on there as a protective coating. (I don't believe the "...

Re: Do we have any outdoor cooking enthusiast around

Love cooking outdoors... Hard to beat the flavors of wood and charcoal. This is the setup I'm currently using. Dual purpose of being able to cold smoke (cheeses and bacon) small fire in the bottom barrel, or slow smoke (around 225F-250F) with an offset fire in the top barrel. IMAG1468[1].jpg Shotgun...

Re: What's everyone's mash steam injector look like

Like Hillbilly Popstar I literally just use the steam wand from my thumper. Normally I "cook" up the corn is a modified 1/2 keg, but can cook smaller batches in something like this 5 gallon stainless pot. IMAG1289[1].jpg IMAG1287[1].jpg These photos are of the cleaning run on the wand, sin...

Re: reprocess or toss

Thanks Ben you don't want to run excess ethanol in your gasoline. Ethanol stoic is 9:1 so if your car isn't set up to use it you will run lean and can cause serious damage. Lawn mower on the other hand isn't sensitive enough to care [/b] I should not have added that in my post, as it is not good adv...

Re: reprocess or toss

I'm "conservative" there's not a lot I would toss... Stuff that I believe wouldn't taste well or make a good spirit I turn into sanitizer. Alcohol is an amazing sanitizer, (add add a couple drops of scented oil and it smells good too) Alcohol added to your fuel increases the the octane rat...

Re: What's in your Thumper

It varies... If running a Brandy I will shoot the thumper with fruits and puree...If running a strip UJSSM I will fill the thump (2nd boiler) with wash. On a spirit run I will fill the boiler with something that will add character and flavors...Sometimes the wash, or maybe Cinnamon, Vanilla, botanic...

Re: Thumper spears, how many of you guys run one and thoughts?

Are you running 3/4 or 1" on your 'wand'? As you call it, The piping in fluid?
3/4" with 3/4" copper unions (these are a bit forgiving on alignment between the boiler and thumper)

Hey there Hybrid pot still; I can show you what I run... Here is the "spear" I call it a wand...but that's just me. (Don't mean to confuse anyone on terminology) This connects to the lid of the 2nd boiler (thumper) with a copper union 2nd-boiler-spear-2.jpg Cooking-With_Steam-3.jpg Here it...

Re: Anyone mash in their boiler?

Hey there TRK41. I was once challenged to cook, ferment and distill all in one vessel. It can be done! Although there are easier methods. I have a 15 gallon steam injected boiler into a 15 gallon kettle... Cooked the corn, added barley when the temps dropped to the 15x.xx range gave it a good stir, ...

I use regular flour water paste, to connect the lid to the boiler, Mix mine up to the constancy of a noodle before cooking. Have to agree with Jonny's_spirit less is better... I coat both mating surfaces with a bit of shortening (Crisco) when it comes time to remove, the stuff comes right off. I've ...

Re: Why is corn and rye alcohol NOT made by malting (rather than gelatinizing) the grain"

From my memory in the USA malted corn became illegal to sell... I am not sure if malted corn has a high enough DP to convert itself during scarification Yes dry malted corn will convert itself, green malted corn has enough DP to convert itself and then some (like malted rye, wheat or barley) Like ge...

If you want to look at steam heat, there is a forum with much discussion on direct injection as well as bain-marie heated boilers. But, typically the systems used by us hobbiests is “atmospheric”, or near-atmospheric for safety’s sake, because as noted, steam under pressure can be very dangerous be...
