I only use bread yeast.

I have never had this issue.

I use 1/2 of 1 oz. per fermenter MAX. and nearly always
do 3 to 6 generations per .5 oz. of yeast.

Me thinks you are using too much yeast

I based my measurements on Odin's original recipe, then add the smokey malt.

I have found that if I boil for 10 to 15 minutes, rolling low and easy, then after
aging on oak the spicy note really come through.

I use Mestemacher rye bread 1.5 loaves per 7 gallons 3 loaves to the 14 gallon still load. We caught in on sale at Big Lots one day for $2.00 a loaf. Cashier thought we were crazy to buy 34 loaves. If you want a really good tasty Rye, Odin has a great Rye Bread recipe in the Tired & True. We often add a pound of smoked barley to this mash and its is according to my wife - Truly Awesome!! Up here in the north west we get a lot of white oak pallets, But I find wine barrels are easier and cut up nice to fit in gallon jars

Just bought an AMA Mill last month. So far it does a great job, fast, a bit loud I agree but the price is right.
This weekend I hope to adapt it to a 5 gallon bucket as I generally have no need for 13 gallons of anything
but booze. . .

2 thumbs up compared to everything else I have tried

Look at shipping pallets. In the USA about 1/2 of everything on a pallet is on a white Oak pallet.
Strip em down toast them up
