I have always just use the copper rolls however many you can fit in the column all the way from the bottom to the top if you’re going for purity

Nice! Please tell us what the flavor of the yeast is like. I can't imagine that the enzymes would reproduce like yeast, unless it's some crazy GMO yeast that produces it's OWN yeast. I do an all corn mash and want to strip on grain. I have a 15gal boiler and just got a 15 gal thumper with 1 inch intake and out put. Do I need to put a diffuser on the intake? I have a 4inch port so I can do something there. Worried about the grain clogging the pipe. I strip then run a spirit run

I will buy 2.5 gallon beverage servers at pottery barn or Walmart and replace the plastic spout with a stainless or copper one and then leave it on my bar and pour out of that. You can even use it to oak in.

Try oaking on glass then a short period of time in the barrel there are two parts to ageing. Oaking and evaporation Oak it to close to where you want it in glass then barrel it. I lose about 2 gallons our of a 5 gallon barrel. You want to lose that much. Thats when it gets good.

Ok the results are in. It’s no substitute for a year in a 5gal barrel but when I oak it in glass until I get the color and taste I want then 4 four hour sessions in the rig and it’s very smooth.

I do a peach shine made from peaches and sugar i use ec1118 and do a single run with a 4 plate 3 inch column dont reflux for too long after the foreshots are out much of the flavor is in the heads its all about using a good yeast for the fruit mash and a careful run
