I am on my second fermentation and will have time to strip run this one when it's ready. I have to leave town for about ten days and would like to hold it over until I return. What is the best way to do this if it's possible :?:

Did a lot of tree tapping and maple syrup making when I lived in Wisconsin. It was a great family activity. We tapped close to 50 trees but carried sap in 5 gal. pails and a yoke. Holy smokes, it's so good. It has that fantastic honey malt aroma and deep grainy flavor. I will certainly make more!

I pitched yeast a week ago last Sunday and got good amount of activity for 3 days. I had to leave it for a long weekend away. Everything finished out nicely and ended up with a little overa gallon of likker. Aired it out, and ended up with some good corn flavored stuff!

Going to run it down to about 20% and shut down. Ran my thumper with a small amount of wash, water, and some of the corn from the first ferment. Any suggestions on a better approach for my next run?

In my run right now. No real change in flavor to it since I started. Separated the first 30 oz of my 10 gal. wash.
At 70% abv right now. Collecting in pints. Might I see a change in flavor to a sour mash type in following generations?
This is great to see my efforts in still making working out :D

I was thinking of getting a 10 gal. Brute container, food grade, and top from a local restaurant supply house to use as a fermenter.
Good idea?
