Re: My first still built from a Guinness keg... naming suggestions welcome!
how have you connected the coupler? i'm not sure a keg coupler makes a great stillhead to be honest. not that i haven't wondered if there was an easy way myself, but there are a couple of big issues with using it without a fair bit of modification

Re: Whisky Mash Problems (Gravity Not Dropping Enough?)
pH is unlikely to be an issue in an all malt mash like that. i would have said a high mash temperature is a likely culprit, but you didn't boil the wort, so did you let the temperature fall natually before pitching the yeast? i do wonder why you added simple sugar to the yeast, when you are trying t...

sounds like between your sparky friend and the data you got you got this under control. i'd caution anyone in future to not give advice on something like this they admit they don't really know about, as connecting this up wrong - especially whacking them all to hot wires if its designed with a neutr...

Re: GENERAL Mashing Questions
Most of the interviews with commercial distilleries say they mash at 72-75c for an hour. Which now just confuses me. just on that one point, i don't know what distilleries you've seen interviewed but you may find that they are referring to the temperature of the "water", not the actual ma...

like ac says, it does depend a bit on the equipment you have. probe, size/shape of fermenter, heating/cooling method, type of wash. as far as pointing you in the right direction.. anything fermentation related will naturally be covered a lot more extensively on the big homebrew forums, so they are w...

Re: Favorite "drink right away" wash
hey twisted. the rum is an all molly wash with feed grade stuff, fermented with american ale yeast as that always seems to come out nicely clean for me. stripped it all then ran half on a pot and yup half on the ccvm with 500mm packing, taking off around 90-92% i think it was. both pretty tight cut ...

good answers, and the article itself is a good read. here's the thing though, it just gives the complicated science (which to be fair is already on the forum) behind all the standard advice given on these forums. things like "chuck the feints in the next strip" etc. always nice to know why...

Re: Favorite "drink right away" wash
The still, how it's run and cuts are just as important as the recipe  or perhaps even more important to an extent. i've been drinking rum i refluxxed over 90% and cut tiiight after a couple of days and it's been really nice. sure, it still took a couple of months to become something truly spe...

Re: To Boil Or Not to Boil ?
personally i'd just keep sparging, saving the boiling for in the still. that would bring the overall SG lower than the 1,078 you're seeing, at a volume large enough to do two stripping runs. gives the benefit of easier ferment for the yeast. i usually have an SG of 1,055 to 1,060 for whatever thats ...

probably worth at least bearing in mind that there may be slightly different interpretations of what is considered heads and what is hearts, among home distillers. and even more so when comparing to commercial enterprises. though if in doubt i'd probably go cautious with a project that a lot of work...

How much of the ageing is due to oxidation And how much is due to ventilation  this was actually my first thought before i even read down. i age everythng in glass, trying to get repeatable procedures, so it's something i regularly think about. i'm fairly comfortable with my spirit getting oxi...

just play around with the position of the condensor.. rotate it one way or the other; push it in and out; raise the angle upwards more towards 45. something will work

always got a couple of tins of the yellow stuff as backup. certainly ferments fine, though i've not experimented too much with it. what sorts pitch rate you guys using? for some reason i've ended at a third of a tin (say 40g) per 15l roughly. not sure why but it seems reasonable ferment.

scale is kinda important here.. if i am fermenting a 145l wash at odin's 0,7 grams a litre then does anyone really expect 1,5g to make a difference if i round it down to 100g? does anyone really expect most people to be that exact? conversely.. From my experience it makes no real difference if you f...

hey.. does anyone have a good method to remove fusel oils and all that from low wine storage containers? (+1) - I don't even bother dissolving the sugar - just tip it in straight from the packet - That was good enough for many years of winemaking, so I figure it's good enough for a wash. The yeast eats it up fine. I've not done this with sugar, but when I make mead I only dissolve a small amount of ho...

i've only seen it as an addition to other nutrients rather than suggested as an all encompassing nutrient hit. can anyone confirm if it has everything that a sugar wash would need? molly washes obviously would start with more nutrients compared to sugar washes, can dead yeast provide all of the rest?

if you're really concerned about the ptfe gaskets leaking (if maybe using cheap triclamp flanges) a wrap of ptfe tape around the flange face or gasket is an option. i cut ptfe lid liners out of sheets. it's interesting that ptfe is not totally vapour tight in the long run - the angel's still visit. ...
