I'm aging in big glass balloons (30L) - and I stopper them with a piece of cloth, allowing quite a bit of air contact.
Wether that is good or bad I don't know. I'll find out in another year or so when the first rum is ready.

It's now been a year since I made my Shochu, and it's been sitting on the shelf maturing in bottles. Now I opened a couple of bottles for the first time in a year and shared it with some japanese friends, and my pretty decent Shochu from last year had matured in to rather damn good Shochu this year....

I didn't have any buttons laying around. But I'm making a modification to this project where there are two buttons making it possible to change the dosis.
It is however allready connected to the iot and possible to remote control the contraption.

I'll put some buttons on there to adjust dosage. Then we have perfection. Maybe even try to 3d print a casing so the contraption fits snugly on a bottle of my hand sanitizer/limoncello. Except that the WHO recommendation specifically states that H2O2 is not an active ingredient in the sanitizer.

Messing about with Hydrogen Peroxide is really not needed for hand sanitizer. The H2O2 is added to kill off spores that may be in the finished product, but does nothing for killing bacteria or viruses. Isn't that kind of a lot of sugar in a 150L wash.....maybe I got it wrong but by my calcs should produce a wash about 22-23% .....EC1118 is good shit witha high abv tolerance but I reckon even it might struggle under a work load like that . I just set up a 150L with 60kg sugar ferment. Since this is meant for sanitizer I gave it a handful of DAP and a bunch of other nutrients plus 300g of CC. I imagine the main problem with solar stills is to get enough of a temperature difference between the evaporator and the condenser. It'll probably not make Pixieoverlord less confused by introducing BTU as a unit of measure at this point. BTU is a clunky old measure for thermal energy.
