Re: Firecracker Bourbon

Wow, this looks great. Maybe I'll give this a shot one time. Too bad that we don't have much good quality corn over here... Most of it is used for animal feed and hasn't much flavour, do you think this can be improved by malting the corn?

Re: Aging single malt whisky in a 5 lts barrel

4 months is already quite long for a 5 liter barrel, 4-6 weeks usually is plenty for a first fill. Your plan to take it out of the barrel to let it age further in glass sounds good to me.

Re: NChooch's Carolina Bourbon

Did a version of this recipe today. Used 3 kg of flaked maize and 1,5 kg of pilsner malt. Used high temp alpha amylase while boiling the flaked maize, boiled it for an hour. After that I added the pilsner malt at 65 degrees celcius and kept it on that temp for 2 hours. SG is only 1020,so I guess I d...

Re: Odin's Easy Gin

I think you would end up with a different gin, since different ingredients have different solubility. Therefore the taste will change if you leave the botanicals in longer. From what I've read, Odin did a great job determining how much ingredients are needed and how long you need to marcerate them, ...

Re: Burbon Recipe into 3 gal barrel for 20 months (bad outco

Maybe I read I wrong, but did you make cuts by tasting the jars without proofing it down to around 60 proof? I doubt if you can make good cuts at such a high proof. Regarding the over oaking, don't worry it can still turn out fine. I had some ryebread whiskey with way too much oak and after taking o...

Re: Storage containers

Those bottles with a flip top are sometimes made of plastic and the seals from some sort of rubber and those will degrade over time. It is advised to not use them but use a cork instead. When using a cork, I believe a natural cork is preferred over a synthetic one. When it comes to plastics, ptfe is...

Re: Show us your dunder pit

This is my first dunder pit. I had some maggots, so I scooped them out and closed the lid. This caused the pellicle to drop and after reading that it needs airflow, I decided to open the lid and now it's growing again. :) [img]https://uploads.tapatalk-cdn.com/20181007/d50e572e6d39cf81f1a024e717ccf81...

Re: Muck Pit Lifecycle

Shit, those are a lot of maggots. I have started my own pit a few months ago, after my first rum. After a few weeks I got some maggots too, but I removed them and closed the lid. This caused the pellicle to drop and I thought I had to toss it. But after reading this thread, I placed the bucked somew...

I haven't done a rum rum since I started my dunder pit. I did however trow an overripe banana in it. Will it hurt to keep it this way and check PH next time when I will be adding fresh dunder again?

I hope not, my pellicle has been gone since the temperatures have dropped. It does smell very good and fruity! I think it will return next summer when the temperature rises again. Haven't used it yet, so am looking forward to my next run :)

I have a copper boiler, stainless steel riser and copper condenser. I did not get the butter. I think it is because I let it sit 1-2 weeks after it was done fermenting.

That would explain why I didn't get any butter. I have fermented slowly, at a relatively low temperature, used nutrients and distilled about 1-2 weeks after the ferment was finished.

So I didn't get much butter in my first stripping run. However, this is my first rum ever, so I don't have much to compare to. My next strip run will be from the same wash, but without the butter treatment. This way I can compare both runs and see if I can find any difference between them. I have ke...

Re: Butter Rum

I have done the butter treatment and am heating up for the first strip run as we speak. I am not using fancy molasses, I think blackstrap molasses? (a bit salty, not just sweet) I used plain white sugar and bakers yeast.

As soon as I am done, I will let you know the results!

Regarding the stripping run, does it matter if the destillate is warm? Or is it fine as long as the condenser is knocking down all the vapor?

Just finished my first batch and it's now aging on JD chips, smells promising! Must say that I was a bit disappointed with the smell and taste of the white dog, but I expect that this will change over the next generations.
