Wow, this looks great. Maybe I'll give this a shot one time. Too bad that we don't have much good quality corn over here... Most of it is used for animal feed and hasn't much flavour, do you think this can be improved by malting the corn?

4 months is already quite long for a 5 liter barrel, 4-6 weeks usually is plenty for a first fill. Your plan to take it out of the barrel to let it age further in glass sounds good to me.

The package said bring the grains to a boil and add amylase and keep at a simmer for an hour?... Will try to add the corn to boiling water and shut off the Gass next time and add the amylase add a lower temp.

Did a version of this recipe today. Used 3 kg of flaked maize and 1,5 kg of pilsner malt. Used high temp alpha amylase while boiling the flaked maize, boiled it for an hour. I think you would end up with a different gin, since different ingredients have different solubility. Therefore the taste will change if you leave the botanicals in longer. Maybe I read I wrong, but did you make cuts by tasting the jars without proofing it down to around 60 proof? I doubt if you can make good cuts at such a high proof. Those bottles with a flip top are sometimes made of plastic and the seals from some sort of rubber and those will degrade over time. It is advised to not use them but use a cork instead. This is my first dunder pit. I had some maggots, so I scooped them out and closed the lid. I haven't done a rum rum since I started my dunder pit. I did however trow an overripe banana in it. Will it hurt to keep it this way and check PH next time when I will be adding fresh dunder again?

I hope not, my pellicle has been gone since the temperatures have dropped. It does smell very good and fruity! I think it will return next summer when the temperature rises again. Haven't used it yet, so am looking forward to my next run

Looks great! I have distilled gen 2 last week and Gen 3 is bubbling away as we speak. Will be collecting the low wines of 3 generations and do one spirit run. Wil be filling my 5 liter French oak barrel with it. Can't wait for the results!

I have a copper boiler, stainless steel riser and copper condenser. I did not get the butter. I think it is because I let it sit 1-2 weeks after it was done fermenting.

That would explain why I didn't get any butter. I have fermented slowly, at a relatively low temperature, used nutrients and distilled about 1-2 weeks after the ferment was finished.

I have done the butter treatment and am heating up for the first strip run as we speak. I am not using fancy molasses, I think blackstrap molasses? (a bit salty, not just sweet) I used plain white sugar and bakers yeast.

Wow, I now understand why my ferment is taking so long. It is no way near as active as yours. But it is almost finished, so I will be doing the full butter treatment somewhere next week!

Regarding the stripping run, does it matter if the destillate is warm? Or is it fine as long as the condenser is knocking down all the vapor?
