As a homebrewer, I'm very much used to the idea that the yeast is responsible for a huge amount of the final flavor. The same ingredients/mash bill will produce two wildly different beers if you use a Belgian or Saison yeast versus a California Ale, for instance. From fairly extensive thread reading...
