Re: Just Post a Pick of your Rig
Just completed a 'stripping' run through my new worm. I filled the 235 L oak barrel with 50 F water and ran 15 gallons of molasses (rum) wash through it, boiler-thumper-worm. Without ever changing out or circulating additional water, the distillate came out at a steady 50-51 F. Quite a change from m...

Re: Double Fermented Sour Corn Mash from Scratch
Regarding the photo and comment, ya'll probably know that the .900 was a typo, the FG was .990. Thanks for not reprimanding me for 'BS'.

Re: Just Post a Pick of your Rig
This week I completed the fabrication of my new bigger, badder worm condenser. A 228 L oak barrel with 30' of 1/2" I.D. copper tubing. it was a bit of a struggle getting the coil elevation correct with no 'flat' or 'high' spots. After finishing, I ran a vinegar wash through it to clean. Looking...

Re: First Whiskey With Enzymes
You are right, I should have mention the shred job the enzymes did. I followed the directions explicitly from Enzymash. Made me a believer! The wheat vodka is EXCELLENT! Mrs cariboux attests and she is a fine critic! Holds no punches. I did a stripping run straight off my alembic, then the 2nd 6 gal...

Re: Is stillin in your family tree?
I haven't delved into my ancestry much, yet, but do know my kinfolk originated in Kentucky and all were (are) whisky sippers! Anyway, I've attached a really cool picture given to me by a good friend. His great-granddad and grandpa owned a cooperage and are in the pic.

Re: Just Post a Pick of your Rig
My set-up is a 10 gal alembic with an 'onion-head' and 'swan's neck' vapor line. I run into a wooden 5-gal charred oak thumper keg, then the worm. My still produces ~130 proof and slowly declining without the thumper. Running with the thumper charged with distillate (eg. 2nd gen sour mash), the worm...

Re: Jimbo's Single Malt AG Recipe
Jimbo, I got all excited about your recipe and attempted with 100% Rye Malt. It was a disaster (my own novice mistakes) and was reluctant to try again. I know now that I will after I finish up a few generations of Sour Mash I presently have going. Anyway, I posted my calamity on 'Tell Us About Your ...

Re: Double Fermented Sour Corn Mash from Scratch
I actually posted this under UJSSM, then surfing around, came back across your post where I started from with this mash. I've included a couple of interesting pics of my 1st Generation fermentation. This last month I started my second run at Sour Corn Mash. This time I started with a 'double' fermen...

Re: Tell us about your mistakes.
ALL GRAIN 100% MALTED RYE FAILURE This last month I tried something I really wanted to do, but was way out of my league and beyond my experience level. I've had great success with everything I'd done so far and I am an example of 'PRIDE COMETH BEFORE THE FALL'! :esad: I was determined to do an AG 10...

Re: uncle jesse's simple sour mash method
This last month I started my second run at Sour Corn Mash. This time I started with a 'double' fermentation process letting the corn sour for about a week before adding a sugar wash to it. I've heard about the mash starting to stink on 2nd day, but mine did not. After mashing more corn with enzymes ...

Re: First Whiskey With Enzymes
My first all-grain with enzymes is fermented and settling out in carboys. An 18 gal all corn. I started it out in my 20 gal open top fermenter barrel 'cus I wasn't sure how much it would foam. Left it over night. No foaming, but WOW was it ever bubbling. Such violence in nature is disturbing :esurpr...

Re: uncle jesse's simple sour mash method
A close variation of UJSSM was my first project after initial novice sugar wash. It went really well and I did 7 generations (10 gal batches in an open-top 20 gal fermenter kept at constant 80F). Aging in 5 gal charred oak barrels now, proofed to 62% ABV (except for regular sipping 86 proof). As you...

Re: Why not 3 thumpers?
Been exploring the site and gleaning as much info as possible from the different boards and came across this. With a chemical plant operator background, and a long time pressure canner (food), I'd never use glass jars in a distillation process. I've posted a picture of my wood cask thumper. I made i...

Re: How to Malt Barley (or Wheat) for Beer (or Whisky/Whiske
Thanks, Buccaneer Bob. Like I said, I'm stumbling around find my way around the site. I went back 'twenty or so posts' and found lots of information answering most of my question regarding 'green malt'. I'd never heard the term, but makes perfect sense.

Re: How to Malt Barley (or Wheat) for Beer (or Whisky/Whiske
I'm pretty new into the distilling, but have been having some great success turning out some distillate I'm really proud to share with my whisky appreciative friends. I've searched for the answer to my question, but if it has already been discussed, please forgive me as I'm really just learning to m...

Re: Just joined.
Over the last six weeks, got to know my still a lot better. Did a 6 gal batch of molasses. I bottled it at 90 proof with a few peppercorns, half a vanilla bean, piece of charred oak, a clove and half a nutmeg. After a month, excellent color and spice. I have friends asking for it as Christmas presen...

I'm an Alaskan from Nebraska. Very glad to have found this forum. Always been interested in 'shine', heritage and stories I grew up with along a secluded river in Nebraska. My young bride (of 40 years) bought me a beautiful copper pot for my birthday. Just finished first batch, 5 gal sugar wash. Act...
