Jimbo, would you have used those enzymes if you were using barley for this recipe?

Theory question
Sorry if this is the wrong spot to post this, seemed like the most appropriate. I am reading my tail off and trying to understand theory, but of course every time I think I understand I realize there’s something obvious I’m missing. Last night I did a stripping run on Jimbo’s all grain. Two inch pot...

Re: First infection
Thanks guys, I feel better. Fizzix, do you mean I let it ferment too long, or the sitting a few days to clear? Or both? Fiddleford, could be that. Mine was a little more round circular mold and not as wispy, but could be same. I’m going to figure out how to post pics now. Small world. I was trying to...

First infection
Hope this is the right place to post this. Been home brewing for ten years, but new to this hobby. Never had an infection until today. Jimbo’s all grain. I’m super uptight about my sanitation, first hints of cloudiness in the Star San and I make a new batch. Sanitized everything. Fifteen gallons, th...

Re: Jimbo's Single Malt AG Recipe
So today is day eight in the fermenter for me on this recipe. Used 30 pounds two row and 15 gallons water. Divided between a five gallon fermenter and a 15 gallon, one packet of US-05 on the former and two on the latter. Forgot to take an OG because I’m an idiot. Both are 1.01 today and taste very d...

Re: Cap question on all grain ferment
Great point, thanks. I was following the recipe and planned on straining today, day eight. But when I saw that grain floating I wondered whether I should wait. Thanks again.

Re: Cap question on all grain ferment
See, that’s how I picture a cap. Mine is more individual grains and no yeast sediment, so I wasn’t sure I had to wait on it to fall. This is the first time I haven’t used brew in a bag method so this part is new to me. Thanks, guys.fizzix wrote:This is a robust cap I had recently, school.

Re: Cap question on all grain ferment
Reviving and old thread here. A bit confused as to what exactly the cap means. I have Jimbo’s all grain going. One fifteen gallon fermenter and one five. Been going eight days. Both at 1.010 (I screwed up and forgot to take OG). The five gallon has some clear liquid on top. The fifteen has layer of ...

I asked this on one of these threads and someone told me it meant the average of the whole mixture, but it sounds like people use it different ways. Thanks, guys.

Re: Cuts advice
Thanks for all the advice, guys. Did my cute this weekend and it went fairly well, I think. I didn’t think I was being greedy but I ended up keeping 70% of the total, so I guess I did. Oh well, I have two more stripping runs set to go and I’ll be more conservative next time. I’ve moved on to Jimbo’s...

Re: stripping run advice, temps etc
Sorry to revive an old thread. I used to think that when people said they ran a stripping run down to, for example, 30% they meant until what was coming off was 30%. But I have recently realized that they mean until the abv of the mixture is 30%. So my stupid question is, does that mean y’all are co...

abv looks good from a start of 21%. your heads start at the first jar and likely end at jar 2 or 3. hearts will continue until the 62 jar. maybe have a tasty jar around 59. 51 is almost for sure tails. leave it air out for 24-48 hour covered with cloth in a room where the air doesn't move much. do ...

I promise I've done my reading. Have read kiwi's beginner cuts post more times than I can count. About to attempt my first cuts and thought I might get a little guidance so I don't ruin it. I am trying, per the advice from you guys, to not focus on abv and temp for cuts, but I can't help wanting the...

School, 11 gallons at 8% (if thats what you got) is about 1 gallon at 80%. With losses the 1.5 gallon at 40% is within the realm of enjoy your experience and have a toast, you did good. Definitely take it down a little (30%) and run it again. Whiskeys are much better run twice for certain. make you...

Thanks, guys. This is way more complicated than I thought. Maybe I’ll just get a better propane burner. Yummyrum, that’s a good point. My current favorite recipe ends up with about eleven gallons to boil so maybe hats doable.

Cartridge heater
I've tried to do my reading but I'm still confused. Considering a 15 gallon milk can boiler from brewhaus. Would love to go electric. Brewhaus has a cartridge heater (linked below) that I'm considering. On their page they say this 1500 W cartridge is sufficient for up to 15 gallons. But from my read...

Re: Jimbo's easy 1/2barrel Wheated Bourbon and Gumballhead
Just curious if the volumes I got from the bourbon recipe seem reasonable to y’all. I ended up with about 11 gallons to distill after racking. Two inch pot still. Got 6.2 liters at 41% abv. Sounds about right? Also, would y’all dilute that down a bit and do spirit run or should I repeat for better v...

Re: Combine Low Wines from Different Recipes?
I have done a stripping run on a simple corn whiskey recipe (85% flaked maize, 15% 6-row). I’m wanting to step up to Jimbo’s bourbon recipe next. Would it make sense to take the feints from the corn whiskey spirit run and add them to the first Jimbo run, since they’re fairly close in ingredients? O...

...In other words, can I get one five gallon batch fermenting then add another batch a week later to the same fermenter?... Of course you can. But, you don't aerate the fermenting wort like you would a wort fresh out of the kettle. The active ferment is already in latent fermentation, ie - non-aero...

Re: spirit run volume
Why not just ferment one big batch, and take out enough at a time to distil in your small boiler? That's what I do. In fact I run two big fermenters so that I always have material ready to distil, no waiting for the new batch to finish fermentation. Geoff Only have a ten gallon brew kettle (for now...
