Okay, so today is 3 days later. The yeast was bubbling like crazy for the past 3 days but doesn't appear active now. Could still be, but no bubbling.

As of now the gravity is 1.012. I'll check again tomorrow but if it doesn't drop any further, should/could I do anything?

Here's what I ended up doing... Heated 16 gallons of water to boiling in a 25-gallon pot. Turned off heat. Added 28 pounds of cracked corn and 2 pounds 6-row malted barley. Stirred/simmered for about 90 mins while stirring very frequently. Cooled corn mixture to exactly 150F. Added 6 more pounds of ...

Thanks. Yes, they are heavy duty canning jars...I have about a thousand (we do lots of canning) and I'll do in 30 second increments and use an instant read thermometer.

Thanks everyone for the great tips! Mine do look pretty similar to that exposure-corrected file. They are dark/charred, for sure. What I've done is move all the bourbon into quart jars with about 2-3 inches of headspace in each. I put one stick in each jar. But right now I'm researching nuclear agin...
