Rye whisky I cry;
If I don't get rye whisky,
I surely will die.

Re: Sour Kegs

Potassium metabisulfite is what I used prior to aging beer with no side effects. Whisky barrel got a quick rinse with some feints I had laying around. I'd stay away from ANY form of soap or detergent. Good hot water should be your best bet.

I used barrel wax on a wine barrel that was leaking my high-octane porter beer. Worked great. Not distilled spirits, though. Take it for what its worth.

Re: PID heat controller

PID will be perfect for heating your strike water and holding mashing temps  but absolutely useless for running your still . look at Auberens Eziboil . They have a controller that uses a PID controller for mashing and can be switched to manual Power control mode for Distilling ...

Re: Twin elements

If you want to go the digital power regulator route the Auber DSPR400 has a built in relay along with being able to control an SSVR at the same time for ramp up heating. What you end up with is a unit that runs both elements during heating (1 through contactor switch and the other through an SSVR) ...

Re: Flaked rye and flaked corn

My bad for not checking back in. As I recall (I don't take notes) I ended up with 3+ quarts of about 145-50 pr after blending. Cut to 120 and put on medium toast French oak chips. Some with a few cacao nibs. Even though slightly one dimensional, its my favorite rye; I have a modest collection of rye...

Re: Question about feed grade molasses

I bought and fermented 10 gal of 'feed grade molasses'. The sludge involved was scary, but I went with it. Cost me $27 per 5. Cheap. I'm back to $18 per 1 and much happier, although it did make good rum. I just didn't like the solids involved.

Can't explain it. Its down to 0.99. I'll probably have a total of 7-10 gallons to run. I'm delighted but will wait another week for it to settle somewhat. I'll report back.

Re: Flaked rye and flaked corn

A few years ago (22 to be exact), I brewed a rye beer (Roggen) in the traditional German wheat style at a local brewpub. The batch size was 7bbl, or roughly 250 US gallons. The recipe was 40% malted rye, 40% malted wheat, and 20% malted barley. Normally, a brew day would be done in 8 to 10 hours in...

Re: Flaked rye and flaked corn

Well, I appreciate the responses but I'm still confused. I'm not in my shop right now but I think I used amylase enzymes. One of them didn't have a temp range listed and the other said room temp. I'll elaborate when I'm back in the shop. I ordered some more rye (flaked, crystal, malted, etc.). I'll ...

Flaked rye and flaked corn

So, this is embarrassing. Been brewing better than average beer for 12 years or so, but never with flaked grains to any extent. One might think its a simple thing to step up to mashing a mix of flaked corn and rye for a rye whisky. At 74 years old I was looking for another adventure. BTW I've been d...

A big welcome to our community. More info here than you'll ever need.
BTW I'm a big fan of rum. Seems to turn out just right, although I'm smoking some agave leaves for a "tequila" right now. Have some blue agave syrup and I'll ferment with some smoked agave for flavor.

Once again, welcome.
