Well I'm using this to make a 'sake' and 9 hours after rubbing the angel yeast into cooked rice the air lock was bubbling well!

Cornmeal would be great, IMO. I have been using cracked corn from the feed store and grinding it more finely myself. Also a boiling water or backset steep will help with yield by pre-gelatinising some of the grain, which helps conversion. I wasn't aware that this yeast had live Rhizopus, I thought ...

Any reason why you didn't just add all the water upfront? Also, cooking is unnecessary... BTW it's white sorcery if you were using rice, unless it was black rice... Well I'm aiming for a sake replica or Chinese rice wine so letting it ferment 'dry' gives the rhizopus chance to grow through the rice...

Finally got around to experimenting with this stuff Sunday evening. Cooked 8kg of sushi rice, waited for it to cool and massaged in a good helping of this mystical powder. Caution: it has plastics in the alcohol path, including the proof testing tube. Best to go the “build your own” route, although the boiler looks quite robust and includes a T/C style vapor outlet which would make adapting a homemade stillhead to the boiler easy. I added ribena to a rum spirit run in the hope of bringing some blackcurrant flavour over. It was awful! Think it left the blackcurrant in the boiler and brought the preservatives over!

Went to strip 80l of kveik hornindale fermented corn whiskey this weekend. Charged boiler with first load and and as the column started to heat.... my controller went pop! 🤬🤬 Waited for it to cool and poured back into the fermenter while I wait for new controller to turn up.
