Wheat based whiskey with rye malt for conversion

So I've got a bag of wheat and some rye on the way I'm gonna mash using jimbos ag as a loose guideline and ferment off grain any one see an issue ? How long do you guys cook your wheat or can I just stick to the jimbos parameters... guess I should be on the search

Sounds like you have a solid procedure for what you are doing maybe just a hiccup with the temps. The last batch I made (wheat barley malt rye malt) I did in 10 pound batches and after all done got in the 1060s just keep a close watch on your temps although some will say ph is key too

Yep, that smell of ripe banana and green apple means it's about to get busy. And during the summer, the fruit flies show up too. They can smell the acetylaldehyde, amyl esters, and ethyl acetate long before you can. Just watch for them. ss A half pint jar or a saucer of cider vinegar and a few drop...
