I'm not a big fan of natural yeast. My thinking is that unless the plums come from a large well established orchard or wild plum thicket and the yeast have had time to adapt to that specific fruit it's a crap shoot. I did not cook with the stones, we removed them when we poured the wine into the pot. Family in Cegled take out the stones for palinka. I remove stones on peach and apricot but not plums. Hermanji, we will have many things to talk about with palinka! Maybe when I visit next I will give some to you....

Hopefully these pics are put up correctly. First pic is the Liebig soldered and cleaned up. Second pic is the set up steam cleaning before first use. My fruit cap has sunk in the barrel so should be stripping my first pálinka tonight!

The final piece is the Liebig. I milled the stopper out from a 28x15x15 mm reducing tee so I could thread a 15mm pipe all the way down. Here it is assembled dry - will solder this week.
