did u crack the grain well ? something similar happened when I made wheat/corn mash and it was poorly cracked. it was so close to 1 gravity in the end that I decided to discard it. was using unmalted grain tho.

@ss I'm in completely opposite camp - I like my drinks less clean, so I'm fermenting and stilling everything on grain. I can't find clear answer how single malt whiskeys are processed prior to distilling. Most articles I read say "it's similar to beer", so I assume it's fermented off-grain ? I understand everyone could be doing something different, but there should be some general trend I guess.

How bad is it to add ice cold unboiled water to cool down my mash and immediately pitch the yeast ? I don't have any other effective method to cool it down, so it's either that or letting it to cool down naturally which takes ~50 hours. Which one is worse ?

Congratz on your first ferment, but you should recheck the math. If this is just a cider with no added sugar, it can't be close to 16 ABV. Given your SG 1.05 or 12.4 BRIX it should go up to something like 7ABV maximum.

To clarify, I'm talking about removing oak dust, my liqueur is great.
As I can understand from all these comments - everything works, only results differ. So I will try out some different methods. Felt sounds really good to start with. Also want to try out some sand and chill filtering.

You can try blending that one jar with 2nd run booze. Should result in richer flavor than full spirit run. I wanted to try this, but then started to strip on full heat, now my first run is undrinkable. Cutting the "best part" out most likely will decrease quality of your spirit run.

Yeah, I did some digging on the internet and concluded it's better to get whole new setup if I want a column. I got to make too many modifications to my still to fit any column, so it's easier to fit on a beer keg or something.

Any thoughts on this column ? At least it looks cool.

Just because whiskey can be made with a plater, doesn't mean it's a better tool for the job than a pot. Your existing still is very capable of producing good volumes of fine whiskey and I doubt that there is any advantage in going to a plater unless you have a good reason to want to do single ferme...
