Odin, Cheers mate! 4 Stripping runs yielding ~6 gals of low wines. 1 Spirit big spirit run that yielded (after cuts and proofing) ~2 gals of 45% nectar. Whiskey friends have already tasted the white dog and love it. Starting some advanced ageing with oak on 4 quarts. Going to start another batch (fe...

First, thank you for your service. I love being able to take a moment to talk to the older vets at a couple of our breakfast joints to thank them. I see it in their eyes that they haven't always had that. Second, "this site is pretty intimidating". Yes, but...there is so much information a...

Re: Dady Yeast failures

Issues with sugar washes are usually, yeast quality, temperature, or PH. I use RS DADY for all of my All Brand and UJSSM (and now Rye Bread) washes. My city water tastes good, but is a PH of 8.5. I use a cup full of oyster shells in a muslin bag added to the fermentation that functions as a PH "...

Re: Rye bread whiskey

Update: Open fermentation. FG = 0.992. Did stripping run today. 1.5 gallons of low wines. Stopped around 25%. Yanked off about 10 oz of smeared hearts and was totally amazed at the taste after a couple hours of airing out. SWMBO was very impressed. Told me to start another fermentation and double it...

Groovedog, Your on a good combination with Mango and Habanero. I've made a number of Capsicumel, Mango Habanero, and Mango Habanero Pineapple meads that have turned out delicious. Re: How do I know when my corn mash is ready to run

When I think fermentation has finished, I take daily readings and if the SG has not changed in three consecutive days, fermentation has finished. I worry about scorching, so I like to let the mash have extra time to settle and clear before running.

Zed,

Need an update please.

Any issues with the fermentation finishing? Infections, smell, etc.

Have you ran it yet? Yield, taste, etc.

Thanks.

Re: Booner's Casual All Corn

Well, this has been a much better experience than my first 2 AG efforts which I easily classified as failures. Did the spirit run today to see if there was actually alcohol in my Booner's mash. Fermentation: SG: 1.063, FG: 1.001 = 8.14% 6 gallon boiler charge for my 8 gallon SS still with a 2in (24&...

Re: Can I use plastic containers on stripping run?

Asos, There should be a number of storage options that do not involve plastic being in contact with distillate. Wine bottles, glass jugs, glass carboys, etc. The search function should be able to find all of those options. The board has a zero tolerance for any discussion dealing with possibly compr...
