Issues with sugar washes are usually, yeast quality, temperature, or PH. I use RS DADY for all of my All Brand and UJSSM (and now Rye Bread) washes. My city water tastes good, but is a PH of 8.5. I use a cup full of oyster shells in a muslin bag added to the fermentation that functions as a PH "...

Update: Open fermentation. FG = 0.992. Did stripping run today. 1.5 gallons of low wines. Stopped around 25%. When I think fermentation has finished, I take daily readings and if the SG has not changed in three consecutive days, fermentation has finished. I worry about scorching, so I like to let the mash have extra time to settle and clear before running.
