You might want to see how accurate your thermometer is. Boil water and see if it reads 212F. Mine reads 208 degrees in boiling water, and will read 169-170 when I start pulling the product.

You might want to check the thermometer for accuracy. Just boil water and see if is at 212F. I have seen them as much a 6 degree's off.
