Re: First peated whisky fail

My first peated whisky tasted pretty off in the initial months. I followed the novice guide for cuts , so I was confident in the blend, but it tasted weird and unfamiliar. After a year it was really very nice. Read all the beginners advice you can find on this site, then try again and trust the proc...

Re: SBB's All Molasses Rum Recipe

Cheers Bill, I’ll be sure to report back once the rums have aged a while. I ran the remainder of my SBB low wines (probably 10L worth) and a fresh 35L wash through my four-plater this weekend. Obviously the jury’s out until they’ve aged on wood for a while but I can say the rum didn’t seem to lose ...

Re: SBB's All Molasses Rum Recipe

Running feints though a reflux column is a great way to get a nice Light White sipping Rum ( think Baccardi style ) to enjoy now while your Flavour Rum matures on Oak . While it’s a good way to use up excess feints , a bit of Rum wash doesn’t hurt either . Having said that . One thing that makes Sa...

Re: SBB's All Molasses Rum Recipe

So I’ve ended up doing 5 ferments of this since I started in January, the last of which is currently finishing up. They have all been roughly 35L batches. The first 4 strips yielded about 45L of low wines at 25%. I left 10L aside and did a spirit run on the remaining 35L at the weekend, just straigh...

Re: Oat,Wheat,Rye Whiskey/whisky

I had a go at this one recently. Due to the available malt I subbed in a bit of roasted wheat for the unmalted portion of the recipe. That gave the beer a beautiful dark toasty quality without any bitterness. Man alive the ferment smelled good…. blah blah blah I said I’d revisit this in 6 months an...

Re: SBB's All Molasses Rum Recipe

Thanks Chris, good to know you’ve had success double pot stilling. I’ll stay the course then I think. I think you boys might be talking at cross purposes. I think SBB was suggesting a full keg of stripped low wines (no cuts), and then a spirit run with the column, not 3 or 4 spirit runs through the ...

Re: SBB's All Molasses Rum Recipe

Cheers Bill - I have a plated column on the way so I could wait to do the spirit run. The other option would be to split the low wines and pot still half now, and do another variant (1.5 run or just low wines) when the column arrives. I’ll have a think on that, but if anyone has experience with stra...

Re: SBB's All Molasses Rum Recipe

Alright, I’ve had a fermenter of this on the go pretty steadily for the last few months, stripping and recharging whenever I felt the urge and found the time. Had some very settled washes! I’ve had to do 35L batches but this last one should get me to a keg full of low wines. Since I’ve invested so m...

Haha well you might expect it to be DPhil, but confusingly that’s what they call a PhD at Oxford.

Interesting subject matter either way, so thanks for posting.

Contra, you know that Doctor of Philosophy is what PhD stands for, right?

Following your examples above, you’d say that Mr Arnold is pursuing a PhD in Plant Breeding, hence the subject matter.

Re: What'd ya'll make today?

I had a tilt at a highland style whisky this weekend. Grain bill was (all Gladfield malted barley): - 75% ale malt - 15% toffee malt - 5% shepherd's delight - 5% dark chocolate malt 3:1 water to grain ratio (45L:15kg) single step infusion mash (which mashed at 67/66*C - I was hoping for a touch lowe...

Ninety mile beach is in New Zealand.

Confusingly it’s only about 55 miles long.

Re: Black Peppercorn in Gin

I got quite a nice black peppery taste from cubeb berries in a recent gin. I’ve never done it with peppercorns so can’t compare but that might be what you’re after? They smelled lovely.

Re: Hi from New Zealand!

Oops sorry. Just saw you wanted the corn for UJSSM, not all grain. Search for kibbled maize. Farmlands definitely has it but there might be others closer to Wellington.

Re: Hi from New Zealand!

Gidday Ross, you can get malted corn and corn grits from HBmalt.co.nz , best website I’ve found these ways for distilling products. There might well be cheaper sources around but they’re a good start.

Re: SBB's All Molasses Rum Recipe

Oh to the spirit run? Righto, thanks. I’ll fill the jar from the beginning too. I know what you mean about it needing time. I made a molasses/cane sugar rum and in lieu of dunder I let a few litres of backset from my peated single malt whisky get infected and threw that in the mix. I absolutely dete...

Re: SBB's All Molasses Rum Recipe

Bill, thanks so much for this protocol. I’m a big rum lover and this process appeals to me on a deep philosophical level. I love the simplicity, the unadulterated molasses bent of it, and the continuous ferment aspect. I’ve got an insulated cooler that I’ll probably keep aside for rum as it comforta...

Re: Oat Whiskey

Thanks Expat, that does help. The way I read wineo’s method was that the backset keeps going back into the fermenter (in its entirety) and after 3 runs (i.e strips) you add more grain. That process is repeated for however long it takes to collect a boiler full of low wines. That confused me as it se...

Wellington, NZ

Evening. Been doing a LOT of reading here. A good friend of mine might be sliding me a stainless keg, in which case I’m building. Or I’ll just buy a shop one (made in my city) until I have an idea of what I want to build. Either way, very exited for a pot still build and a few runs of drinkable smal...
