Re: Booner's Casual All Corn

I didn't have much luck with this recipe until I added some acid to the mash. My water starts out with a pH of about 7.9 according to the water dept and is very hard. to about 12 gal of water, I added about 2 or 3 gal of backset. My pH paper is apparently about worthless, because that didn't look l...

Re: Mashing with Infected Backset

Well that batch turned out great and I can't say I could tell any difference for sure but it sure is nice. I saved one bottle of the nicest hearts white and cut a bit wider for aging and the white is already good. I put it in a corked bottle to age a bit and I am looking forward to tasting it in a f...

I am finally doing a spirit run on some all corn whiskey that I used some infected backset in. So far it smells promising.

Re: Condenser water cooler.

One day I will finish what I started because I am getting tired of the mud puddle when I am not using the water for mashing. Why the hell would you have a mud puddle? An overflow port at the top of the flake stand hooked to a garden hose which drains away from the still site would take care of that...

Re: What'd ya'll make today?

I got right about 6 gallons of low wines @ about 30%abv from 20 gallons of all corn which is a large improvement over my previous yield of around 4 gallons from the same amount of mash.

A sample of the Whatever Jar. Very nice. It's quite a few years old now and contains leftover products from home distillers and commercials. It's a 5l bottle to which I add various samples and leftovers that I have been given, or made, and occasionally pour a drink from. I occasionally add another ...

Re: What'd ya'll make today?

I finally mashed my last bag of corn and when it is done I am going to have to decide what to make next but I am leaning towards rum just to see if I can make something drinkable because I don't like any of the store stuff I have tried. I think this mash is going to be much more productive than my l...

Re: What is everyone drinking?

I sipped some Pyrat XO Reserve rum that I put on oak sticks 8 days ago because it was undrinkable and I wondered what it would do. It is actually really good now. The oak sweetened it and took away the nasty solvent flavor that it used to have. I was shocked by the transformation.

Re: Mashing with Infected Backset

Zeo, Unfortunately that’s mold in your bin, not lacto pellicle. A big difference and not near as appetizing. I wouldn’t want to use the mold scum, although the backset below it is still probably OK. Bacteria doesn’t like to grow in such an acidic environment. ss Yeah I figured it wasn't lacto but i...

Tonight I am making a batch of all corn if my low propane levels don't totally screw my plans up. I have included about 3 gallons of infected backset because it was all I had to adjust ph so it will be interesting to see in a few weeks how that works out for flavor. I figured I would post here rathe...

Re: How can I make a water tight seal?

Use Silicone sealer ... it will stick like shit to a blanket and is flexible so different heat expansion issues won’t matter . Just make sure the silicone is fully cured before you test it with water . This - just use a silicone that is heat resistant - just go to you your large hardware and start ...

Op is there sugar in the recipe? I see some comments mentioned ditching the sugar but I don't see any sugar in the list.
This is my recipe that I am developing. I added the sugar to see if it boosted alcohol output. I'm in the testing phase.
Ok I guess missed that part. I better reread it.

Have fun opening cans. I foresee sore fingers. Mrs Cranky has that down pat, a short butter knife or church key is all it takes and no sore fingers. I'm on the pink run now. I just tasted a few drops of the heads on my tongue and it has a definite watermelon flavor. I guess the artificial watermelon flavor comes over in the distillate. It's going to be interesting to see what the spirit run is like on this. I found that when I ran some lime cel...
