SCR

Anyone have a source for an American made SCR for a 5000 watt element? All I see are the cheap Chinese ones and I’m looking for an SCR that has a full range of adjustability.

Bourbon Column

All I'll ever make is bourbon. Right now I'm just using a shorty Ebay copper column (pot). What would be the very best column for making nice bourbon?

I don’t see anything wrong with a thermocouple when installed properly. I ordered a threaded stainless probe. This will be a rock-solid set up when done.

I did SG/FG on the first run but none after that. I’ll just say that the angels sure got their share from a faulty thermocouple connection.

I read that in this forum somewhere. I have found the root of the problem today and it’s not a mashing problem at all. It was a mechanical problem on my still, but I won’t go any further lest I end up in that section on ‘what not to do’.

On the first run, I used a paint stirrer drill attachment during the mashing process. I stirred it well over a period of 3 hours. For the subsequent batches, I just used a big spoon. Maybe this is the problem?

This oak is 3 years seasoned. "Live Oak" is a species of oak in the white oak family. Maybe I should have clarified haha

This is all live oak, and I chose only the densest parts of the heartwood. It's very well seasoned, I use this wood for smoking meat and I'm a snob when it comes to wood for that. Well I cut some live oak chunks today. I’m going to medium toast them on the BBQ pit this weekend. This stuff is hard as hell, gave the carbide blade a workout.

Lacto and flavor

I'm on my 3rd mash of NChooch's bourbon recipe. So far, I'm 3 for 3 with lacto forming on the top at the end of fermentation.

Anyone have experience as to what this does to flavor? I've been trying to run them as quickly as possible once I see the lacto forming.

Down here in south TX, we don’t have white oak. Not that I know of anyway. We do have plenty of live oak though which is a member of the white oak family. I see that is standard to oak at 120 proof or so... Many of the commercial producers put their spirits in cask at 60 to 65%ABV. And a few producers age at higher proof...up to 70%ABV. Oaking question

I see that is standard to oak at 120 proof or so. Then, the oaked product is bottled at some point and cut to 80 proof. Does the dilution when bringing down to 80 proof affect the color at all?

I’m controlling the speed with a zip tie right now. It works, maybe upgrade in the future.

There was some steam making it to the drill, but I don’t think enough to be a problem. Could easily install a shield to direct the steam away.

I used this recipe for my first attempt at distilling a few weeks back. Everything seemed to go well. I’ve got the second batch fermenting now. The only hard part was straining the grain before putting in the still. I need to find a better method.

The Covid brought me here. It’s been a great lockdown project. I’ve been making wine for years but always wanted to try this. I just did a batch of Nchooch’s bourbon and I think it turned out great. Lots of fun.
