Do NOT seal for at least 24 hours as a thick foamy cap will form within an hour. I put it under an airlock only after 36 hrs so I can monitor progress. 10-4 it’s just a link to my previous post on page “44”. No worries Oh yeah the one with the little cutie oranges! On your next batch, try around 1/3 of the amount of orange you used before, and add lemon zest. Gives a much "Brighter" flavour in the citrus. .... a bit off Odin recipe, but ...

Your ferments should be able to tolerate a dip into the 3-4 range and proceed to conclusion. Ok. I thought that would be the reason for the stopped fermentation. What else could be the cause? i think with the acid, you should do what you need to do to your water, not what other people do or don't do. my filtered town water is usually 7.8-8.0 so i bring it down with citric. i've done about 80 x 25l of FFV and not had a failure yet. never needed to add any oyster. all fermenters are clean...

I've done over 30 batches of TFFV and it has never failed and always started strong and finished within 5-6 days. -- very reliable.

20 batches of gin in, using a good GNS, I have not missed out on any flavour with my one roll of copper in the vapour path. Thanks Bushman. My only hesitation is based on a perhaps false suggestion that juniper berries should be mildly crushed. I was wondering what techniques people use to crush their botanicals. I was thinking of buying a coffee blade grinder and was wonderining if people recommend them or not.
Currently, I crush my botanicals with a mortar and pestle: some mildly and some quite hard.

Bottled a two week-old spirit Run of my Gin ! Yielded 16 bottles and looks very promising. I'm pretty much settled on this Gin recipe and ready to try a different botanical mix to make something different - I need a smaller Gin boiler!

I want to add lemongrass to my gin, and I'm looking for some guidance for where to start with regards to how much to add, relative to juniper: Is it more in the x/10 range or the x/100 range?
I'm also curious if anyone has added it to the boiler for maceration or In the vapour path?
